Instead of relying solely on breadcrumbs and ketchup like in the traditional version, Mexican meatloaf introduces elements like cumin, chili powder, and smoked paprika to infuse the meat with warm, spicy depth. Chopped onions, garlic, and green chilies add texture and a punch of flavor, while corn, black beans, or diced tomatoes can be mixed in for a bit of moisture and variety.

Cheese is another welcome addition. Shredded cheddar or Monterey Jack folded into the meat mixture creates gooey pockets of richness, while a thin layer of cheese melted on top during the final minutes of baking gives the loaf a golden, bubbly finish. Ingredients
  

  • 1.5 lb ground beef
  • 1 cup bread crumbs
  • 1/2 cup salsa
  • 1/2 cup shredded Mexican cheese blend
  • 1/4 cup cilantro chopped fresh
  • 1/4 cup red onion diced
  • 1 egg beaten
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup ketchup
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, bread crumbs, salsa, shredded cheese, cilantro, red onion, egg, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Mix until well combined.
  • Transfer the mixture to a greased loaf pan and press it down evenly.
  • In a small bowl, whisk together the ketchup, brown sugar, and Worcestershire sauce. Spread the mixture over the meatloaf.
  • Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C).
  • Remove from the oven and let rest for 5 minutes before slicing.
  • Serve the Mexican Meatloaf with additional salsa, if desired.
  • Enjoy!

    Mine came out a little dry. I think my breadcrumbs were too dry or the pan was too small. Still ate it though—ketchup-brown sugar sauce saved the day.

      If your pan was smaller, it’ll cook faster on the outside and dry out inside. Did you check temp with a thermometer? 160°F is key.

      Totally get that—mine also reads a lot like “regular meatloaf + salsa topping” until you really taste the seasoning. I do think cumin + paprika can go either way depending on brand and how fresh they are.

    I liked it, but I think next time I’ll dial back the salt a bit. Also mine took closer to 70 minutes to hit temp. Still, the rest time helps a lot for clean slices.
