Ingredients
- 4 cups chicken broth
- 1 cup chicken shredded, cooked
- 1 onion chopped
- 2 cloves garlic minced
- 1 can diced tomatoes 14 ounces
- 1 cup corn fresh or frozen
- 1 tsp ground cumin
- 1 tsp chili powder
- to taste Salt and pepper
- 4 corn tortillas cut into strips and fried
Instructions
- In a large pot, heat some oil and sauté the onion until translucent.
- Add the garlic and sauté for another minute until fragrant.
- Stir in the chicken broth, shredded chicken, diced tomatoes, corn, cumin, and chili powder.
- Bring the mixture to a simmer and cook for about 20 minutes to allow the flavors to blend.
- Season with salt and pepper to taste.
- Ladle the soup into bowls and top with crispy tortilla strips.
