Ingredients
- 4 pieces sausages use your favorite type of sausages
- 1 tablespoon olive oil
- 1 cup onion chopped
- 2 cloves garlic minced
- 1 cup bell pepper chopped
- 400 grams canned tomatoes diced
- 1 cup chicken broth
- 1 teaspoon thyme dried
- 1 teaspoon dried oregano
- to taste salt
- to taste black pepper
- 2 cups potatoes peeled and diced
Instructions
- Preheat your oven to 180°C (350°F).
- In a large frying pan, heat the olive oil over medium heat.
- Add the sausages to the pan and cook until browned on all sides. Remove and set aside.
- In the same pan, add the chopped onion, garlic, and bell pepper. Cook until softened.
- Add the canned tomatoes, chicken broth, dried thyme, and dried oregano. Stir well to combine, and season with salt and black pepper to taste.
- Place the diced potatoes in a casserole dish. Pour the mixture from the pan over the potatoes.
- Place the browned sausages on top of the mixture in the casserole dish.
