Ingredients
  

  • 4 pieces sausages use your favorite type of sausages
  • 1 tablespoon olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 cup bell pepper chopped
  • 400 grams canned tomatoes diced
  • 1 cup chicken broth
  • 1 teaspoon thyme dried
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste black pepper
  • 2 cups potatoes peeled and diced

Instructions
 

  • Preheat your oven to 180°C (350°F).
  • In a large frying pan, heat the olive oil over medium heat.
  • Add the sausages to the pan and cook until browned on all sides. Remove and set aside.
  • In the same pan, add the chopped onion, garlic, and bell pepper. Cook until softened.
  • Add the canned tomatoes, chicken broth, dried thyme, and dried oregano. Stir well to combine, and season with salt and black pepper to taste.
  • Place the diced potatoes in a casserole dish. Pour the mixture from the pan over the potatoes.
  • Place the browned sausages on top of the mixture in the casserole dish.
  • Cover the casserole dish with a lid or aluminum foil and bake in the preheated oven for about 45 minutes, or until the potatoes are tender.
  • Remove the casserole from the oven, uncover, and let it rest for a few minutes before serving.
