Ingredients
  

  • 4 cups mashed potatoes prepared and seasoned to taste
  • 1 cup sour cream
  • 1/2 cup shredded cheese such as cheddar, divided
  • 1/2 cup crispy bacon bits optional
  • 2 tablespoons chives chopped, plus more for garnish

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the mashed potatoes, sour cream, 1/4 cup shredded cheese, bacon bits (if using), and chives.
  • Spread the mixture into a greased baking dish.
  • Top with the remaining 1/4 cup of cheese.
  • Bake in the preheated oven for 35 minutes or until the top is golden and bubbly.
  • Garnish with additional chives before serving.
