Preheat your oven to 180°C (350°F).
In a large frying pan, heat the olive oil over medium heat.
Add the sausages to the pan and cook until browned on all sides. Remove and set aside.
In the same pan, add the chopped onion, garlic, and bell pepper. Cook until softened.
Add the canned tomatoes, chicken broth, dried thyme, and dried oregano. Stir well to combine, and season with salt and black pepper to taste.
Place the diced potatoes in a casserole dish. Pour the mixture from the pan over the potatoes.
Place the browned sausages on top of the mixture in the casserole dish.
Cover the casserole dish with a lid or aluminum foil and bake in the preheated oven for about 45 minutes, or until the potatoes are tender.
Remove the casserole from the oven, uncover, and let it rest for a few minutes before serving.
