Instructions
In a large pot, heat some oil and sauté the onion until translucent.
Add the garlic and sauté for another minute until fragrant.
Stir in the chicken broth, shredded chicken, diced tomatoes, corn, cumin, and chili powder.
Bring the mixture to a simmer and cook for about 20 minutes to allow the flavors to blend.
Season with salt and pepper to taste.
Ladle the soup into bowls and top with crispy tortilla strips.
