
A flavorful twist on a classic dish. This Mexican Meatloaf is packed with spices, cheese, and salsa for a delicious and comforting meal.
Ingredients
- 1.5 lb ground beef
- 1 cup bread crumbs
- 1/2 cup salsa
- 1/2 cup shredded Mexican cheese blend
- 1/4 cup cilantro chopped fresh
- 1/4 cup red onion diced
- 1 egg beaten
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup ketchup
- 1 tbsp brown sugar
- 1 tbsp Worcestershire sauce
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the ground beef, bread crumbs, salsa, shredded cheese, cilantro, red onion, egg, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Mix until well combined.
- Transfer the mixture to a greased loaf pan and press it down evenly.
- In a small bowl, whisk together the ketchup, brown sugar, and Worcestershire sauce. Spread the mixture over the meatloaf.
- Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C).
- Remove from the oven and let rest for 5 minutes before slicing.
- Serve the Mexican Meatloaf with additional salsa, if desired.
