Ingredients
  

  • 1.5 lb ground beef
  • 1 cup bread crumbs
  • 1/2 cup salsa
  • 1/2 cup shredded Mexican cheese blend
  • 1/4 cup cilantro chopped fresh
  • 1/4 cup red onion diced
  • 1 egg beaten
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup ketchup
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, bread crumbs, salsa, shredded cheese, cilantro, red onion, egg, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Mix until well combined.
  • Transfer the mixture to a greased loaf pan and press it down evenly.
  • In a small bowl, whisk together the ketchup, brown sugar, and Worcestershire sauce. Spread the mixture over the meatloaf.
  • Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C).
  • Remove from the oven and let rest for 5 minutes before slicing.
  • Serve the Mexican Meatloaf with additional salsa, if desired.
  • Enjoy!

      Maybe your oven temp is off? Try using an oven thermometer next time. The recipe sounds great otherwise!
