Grilled Sausage & Veggie Foil Packs are an easy and delicious way to enjoy a complete meal with minimal cleanup. Perfect for grilling, camping, or even baking in the oven, these foil packs combine savory sausage, colorful vegetables, and a blend of seasonings, all cooked together to create a satisfying, flavorful dish.
To prepare this meal, start by choosing your favorite sausage—whether it’s bratwurst, Italian, or chicken sausage. Cut the sausages into bite-sized pieces and set aside. Next, chop a variety of vegetables, such as bell peppers, onions, zucchini, and potatoes, into small chunks that will cook evenly.
Lay out a sheet of aluminum foil for each serving, and place a portion of sausage and vegetables in the center. Drizzle with olive oil, and sprinkle with your choice of seasonings, such as garlic powder, paprika, salt, pepper, and a touch of dried herbs like thyme or rosemary. If you like a bit of spice, you can add red pepper flakes or a dash of hot sauce.
Fold the foil around the ingredients to create a sealed packet, ensuring that the steam stays inside to cook everything perfectly. Place the foil packs on the grill over medium heat for about 20-25 minutes, turning occasionally, or bake them in the oven at 400°F (200°C) for the same amount of time. The result is a juicy, flavorful combination of tender sausage and perfectly roasted vegetables.
These foil packs are a versatile meal that can be customized to your taste. Feel free to swap in different vegetables, use sweet potatoes instead of regular potatoes, or even add cheese or fresh herbs before serving. The beauty of this recipe is that it’s easy, hands-off, and can be prepared in advance, making it ideal for busy weeknights or casual gatherings.

Not gonna lie, I’m skeptical about foil on a grill—felt like steaming. But it actually browned the sausage a little so I’m convinced.
Foil on the grill is weird. Wouldn’t the grease just make it steam more? I’ve had packs turn into mush before. Still, if your sausage browned at all that’s promising.
Same! I always think foil is gonna turn everything soggy, but 20–25 min seems like just the right amount to actually get some browning. Gonna try this next cookout.
This is such an easy and delicious recipe! I made it for my family and everyone loved it. Definitely a keeper!
This look yum but I don’t like zucchini! Can I just leave it out? Will it mess up the recipe?
Nah, I don’t think it’s a good idea to skip the zucchini. It adds flavor! Maybe try a different veggie instead?
You can totally leave out the zucchini! It won’t ruin the recipe at all. Just add more peppers or onions if you want. Enjoy!
These foil packs are genius—clean-up was basically nothing and everything cooked evenly. Used mild sausages and it still had tons of flavor. Will make again!
The instructions say 4 packets but I got like 6 smaller ones. I cooked them same time and it was fine, so I guess adjust as needed.
Honestly that sounds right—foil packs are pretty forgiving. If the total amount is similar, just go by how tender the veggies are and that the sausage is cooked through.
These foil packs are genius—so little mess and everything comes out juicy. I used chicken sausage and it still worked great.
Totally agree—foil packs are the best for clean-up. I did these with kielbasa and they stayed super juicy too.
Wait, 20–25 minutes on medium-high seems a little long for sausage slices? I might try it but I’d check earlier… maybe 15-20?
My packets leaked just a bit and the grill flared up. Still tasted great though—sausages were perfect. Annoying, but not a dealbreaker.
My packets did that too—think it’s because the foil is too thin or you don’t fold tight. I started using thicker foil and it helped a lot. Also, medium-high might be a bit hot depending on your grill.
Ugh, foil leaks are the worst 😩 But glad the sausages still came out perfect! Next time I’ll probably double-crimp the edges a little more so it doesn’t turn into a flare-up party.
I added mushrooms and a little red pepper flakes. Still cooked in about the same time. Super tasty and my picky eater actually ate the peppers.
Okay but what if you dont have sausage? Can you use chicken or something else? Just curious.
Honestly, I was skeptical at first, but these foil packs turned out great! The veggies were cooked perfectly. More recipes like this, please!
I totally agree! These foil packs are a game changer. So easy and tasty!
These foil packs are such a lifesaver for weeknights. Super easy, and everything cooks evenly—no sad veggies left behind.
1 pound sausage is like, not enough for me lol. I added extra peppers and it helped. Flavor’s good, though—just make more.
I didn’t have Italian seasoning so I used Italian dressing seasoning (don’t judge). It came out… interesting. Still ate it all, but next time I’ll do the right herbs 😅
No judgment at all—sometimes you just use what you’ve got. I’m curious though… was it more tangy/salty from the dressing blend?
Lol “Italian dressing seasoning” is a bold move 😄 But honestly if you ate it all, it probably still slapped. Next time definitely go with the herbs!
umm i tried it but my aluminum foil ripped and it spilled lol. taste was ok anyways, but i dont know if im doing it right
Okay this was mid. Good idea, but I think it needs a sauce—maybe a balsamic glaze or something at the end.
Totally agree—these packs could use a finishing sauce. Balsamic glaze would be perfect with the sausage/veg.
Pretty good! I think 20 minutes is slightly short for zucchini when it’s thicker, so I’d check at 20 and add 5 if needed.
I didn’t have zucchini, so I swapped in mushrooms. Still tasty, though the packet juices were way more intense—good flavor though!
Yum yum! I used spicy sausage and added corn. So good!
The packets were delicious but I think I crimped them wrong because some steam leaked and it cooked faster on one side.
That sounds like a sealing issue—if the steam leaks out, the packet cooks more like it’s partly exposed. Next time try crimping tighter around the edges (and double-fold if needed).
I’ve done that before 😅 I thought it was “normal” but yeah one side always gets cookier. Maybe your foil sheets were a little small too? Still tasted good though!
I am not a cook but even I made this, pretty simple! 🙂
These foil packs were ridiculously easy—minimal cleanup and the veggies came out nice and tender. Smoked sausage + Italian seasoning is a great combo.
Totally agree—foil packs are the cheat code for weeknights. I love how the peppers don’t dry out and the sausage stays juicy. I might try adding a splash of balsamic next time for extra flavor.
I liked the flavors, but my veggies were a bit too soft by 25 minutes. Next time I’ll start checking at 18-20.
25 min is a long time for zucchini for me. I’d try par-cooking or cutting them a bit bigger. Still sounds tasty though!
Totally agree—mine always get soft around that window. I started checking earlier too, like 18 minutes, and it’s way better.
This recipe is amazing! Super easy and so delicious. My family loved it!
I don’t see why everyone loves this. It was just kinda bland for me. Didn’t hit the spot.
Why foil? Can’t you just cook everything on the grill? Seems unnecessary to me.
The ingredient list is straightforward, but I wish it told how thick to slice the sausages. I guessed and mine were either too thin or too thick—hard to say. Still decent!
Wasted a whole sausages! Messy and hard to get the food out of the foil.
Grilling it to perfection! Just made it and it’s a keeper! Gonna try it again with chicken next time.
I followed it pretty much exactly, but mine took closer to 30 minutes. The veggies were great though—nice char on the onions. Tasty and filling.
Not bad, but the veggies tasted kinda like plain grilled water. Maybe I under-salted. Also, zucchini cooks way faster than sausage, so it needs timing tweaks.
My husband did this, it was on the grill forever and still wasn’t cooked all the way. Disapoint.
I tried this and the foil packets leaked and made a mess on my grill. Idk if I crimped wrong or what, but I was not impressed.
This is a good weeknight idea, but I think 20-25 min is optimistic for thicker sausage rounds. I’d check temp if you can.
I don’t usually trust grill foil packs, but this actually worked. The flavors stayed together and everything tasted evenly seasoned.
Totally get the skepticism—foil packs can be hit or miss for me too. But your description sounds spot on. 20–25 min at medium-high seems like the sweet spot for even seasoning without turning the veggies mushy.
I tried something like this once and my pack leaked all over the grill 😭 so I’m kinda nervous. Did you poke holes in the foil or just fully crimp it shut? Also, do the peppers still get kinda crispy or are they more soft?
It’s okay, but I felt like it needed more flavor. Garlic powder and Italian seasoning alone are kinda flat—next time I’ll add a splash of balsamic or some fresh herbs.
Not bad but mine got kinda soggy because I used too much oil. Next time I’ll go lighter and make sure the foil seals well.
Isn’t this the same as kebabs? I mean, isn’t it just skewered?
Five stars just for the clean-up. Also my kids ate the peppers and zucchini without complaining which is basically magic.
Haha magic is right 😂 And I love that it’s basically a one-pan/foil-pack cleanup situation. Thanks for sharing!
I’m skeptical about foil on a grill—feels like it would get soggy. Surprisingly it didn’t, but I’d maybe crank the heat a bit next time.
Super easy for a weeknight. I tossed in a little smoked paprika too and it made the whole thing taste more “grilled.”
Yes! Smoked paprika is such a good upgrade—definitely gives it that grilled vibe. 🌶️🔥
Mine stuck a bit to the foil even though I sealed it well. Flavor was okay, but cleanup wasn’t my favorite.
Kinda skeptical about foil on a grill, but wow. The zucchini didn’t turn to mush like I expected. Flavor was solid—garlic powder was a good move.
The instructions say 4 foil packets, but I had like 3 because my foil was smaller. Still tasted fine though.
I forgot to season at first (oops) and it was bland until I added salt after. So yeah… measure your salt 😅
Garlic powder + Italian seasoning is my kind of lazy. I had to extend cooking to closer to 30 min for thicker sausage rounds though.
5 stars for convenience!!! 😂
I followed it pretty much exactly and it turned out great. The Italian seasoning + garlic powder combo is legit.
The ingredients list is solid, but the instructions say ‘to taste salt and pepper’ and I always overdo it. Might need a measurement next time.
Totally get that—“to taste” salt/pepper is dangerous. I’ve started adding measurements like 1/2 tsp salt and a few cracks of pepper first, then adjust at the end.
I’d say you don’t really need to measure—foil packs kinda steam everything, so salt should distribute. But yeah if you overdo it, try less at the start. Maybe start with half and see.
Not gonna lie, 20-25 minutes felt a little short for my grill, but I just added a few more minutes and it was perfect.
