Ingredients
  

  • 2 sweet potatoes large,
  • 12 slices bacon
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Toothpicks

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Cut the sweet potatoes into bite-sized cubes.
  • In a small bowl, mix together the brown sugar, cinnamon, paprika, salt, and black pepper.
  • Wrap each sweet potato cube with a slice of bacon and secure with a toothpick.

    Pretty solid idea. Mine took closer to 35 minutes for the bacon to fully crisp, but the flavor was still great. Next time I’ll cut the cubes a bit smaller.

    Not bad, but mine were a little too salty even with 1/4 tsp salt. Also I ran out of toothpicks and used skewers and they kinda slid—still ate them though.

      Good to know about the salt—mine came out fine with 1/4 tsp, but I can see it varying depending on the bacon. Skewers sliding sounds annoying though. Next time maybe rotate them tighter or do fewer bites per skewer.

      Huh, I’d cut salt even more. Bacon is already salty so 1/4 tsp might be too much for some kinds. Also toothpicks vs skewers… yeah skewers would make them wobble. Still sounds tasty!
