Ingredients
  

  • 2 large potatoes peeled and chopped
  • 1 each red bell pepper sliced
  • 1 each yellow bell pepper sliced
  • 4 links sausages your choice of flavor
  • 2 tablespoons olive oil extra virgin
  • 2 teaspoons Italian seasoning dried
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the potatoes, red and yellow bell peppers, olive oil, Italian seasoning, salt, and black pepper. Toss to coat evenly.
  • Transfer the vegetable mixture to a baking dish. Arrange the sausage links on top.
  • Bake in the preheated oven for 45 minutes, or until the potatoes are tender and the sausages are cooked through.
