Potato and Pepper Sausage Bake
A hearty and flavorful bake combining tender potatoes, vibrant bell peppers, and savory sausages, perfect for a comforting meal.
Ingredients
- 2 large potatoes peeled and chopped
- 1 each red bell pepper sliced
- 1 each yellow bell pepper sliced
- 4 links sausages your choice of flavor
- 2 tablespoons olive oil extra virgin
- 2 teaspoons Italian seasoning dried
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper freshly ground
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the potatoes, red and yellow bell peppers, olive oil, Italian seasoning, salt, and black pepper. Toss to coat evenly.
- Transfer the vegetable mixture to a baking dish. Arrange the sausage links on top.
- Bake in the preheated oven for 45 minutes, or until the potatoes are tender and the sausages are cooked through.
