This roasted cauliflower recipe is a delicious and healthy dish featuring tender, caramelized cauliflower florets drizzled with a creamy tahini sauce. Perfect as a side dish or a light main course.
Ingredients
- 1 head cauliflower cut into florets
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup tahini
- 2 tablespoons lemon juice freshly squeezed
- 1 clove garlic minced
- 1/4 cup water more as needed
- 1 tablespoon parsley chopped, for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the cauliflower florets with olive oil, salt, and black pepper on a baking sheet.
- Roast the cauliflower in the preheated oven for 20-25 minutes, until tender and caramelized.
- While the cauliflower is roasting, prepare the tahini sauce. In a bowl, whisk together tahini, lemon juice, garlic, and water until smooth. Add more water if needed to reach the desired consistency.
- Once the cauliflower is done, drizzle it with the tahini sauce and garnish with chopped parsley.
