A comforting and easy-to-make dish featuring chicken, wild rice, and a creamy sauce, all baked to perfection for a hearty meal.
Ingredients
- 2 cups chicken breast diced
- 1 cup wild rice uncooked
- 2 cups chicken broth low sodium
- 1 cup mushrooms sliced
- 1 cup broccoli chopped
- 1/2 cup cream of mushroom soup condensed
- 1 tsp salt
- 1/2 tsp black pepper ground
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the chicken breast, wild rice, chicken broth, mushrooms, broccoli, and condensed cream of mushroom soup.
- Season with salt and black pepper, then stir all ingredients until well combined.
- Transfer the mixture to a baking dish and spread it evenly.
- Cover the baking dish with aluminum foil and bake for 60 minutes in the preheated oven.
- Remove the foil and bake for an additional 10-15 minutes, or until the rice is cooked and the chicken is tender.
- Let it cool for a few minutes before serving.

Is there any reason to use wild rice? This could be better with white rice. tried it but didn’t taste great.
Wild rice is more nutritious than white rice. Plus it has a nuttier flavor! Give it another shot and you might come around.
I actually think wild rice adds a nice texture and flavor! White rice can be so plain. But I guess it’s a matter of taste. 🦆
