A delicious Mexican dish made with bolillo bread, refried beans, chicharrón, and cheese.

Ingredients
  

  • 2 bolillo bread rolls
  • 1 cup refried beans
  • 1 cup chicharrón shredded
  • 1 cup shredded cheese such as Cheddar or Monterey Jack
  • jalapeños sliced, for topping (optional)

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Slice each bolillo bread roll in half horizontally.
  • Spread a layer of refried beans on each of the cut sides of the bread rolls.
  • Top the refried beans with shredded chicharrón and shredded cheese.
  • Place the bread rolls on a baking sheet and bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and allow to cool slightly before topping with sliced jalapeños and chopped cilantro, if desired.
  • Serve warm and enjoy!
