This Grilled Cod with Romesco Sauce is a flavorful and healthy dish featuring tender grilled cod fillets served with a rich and smoky Romesco sauce.
Grilled cod is one of those dishes that proves seafood doesn’t need to be complicated to be delicious. Light, flaky, and mild in flavor, cod is the perfect canvas for bold sauces. And few sauces bring as much character to a plate as Romesco. With its smoky, slightly sweet, and tangy flavor, Romesco transforms a simple piece of grilled fish into a restaurant-worthy meal.
Romesco sauce originates from Catalonia, Spain, and is traditionally made with roasted red peppers, tomatoes, garlic, almonds, olive oil, and a touch of vinegar. The result is a thick, rustic sauce that pairs beautifully with grilled meats, vegetables, and especially seafood. Its rich texture and deep flavor come from toasting and blending the ingredients, giving it a satisfying complexity that’s hard to beat.
When paired with grilled cod, the contrast is perfect. The clean, delicate flavor of the fish balances out the punchy intensity of the sauce. Grilling adds a bit of char and smokiness to the cod, which plays nicely with the nuttiness and depth of the Romesco. Together, they form a dish that feels special but not fussy.
This pairing also lends itself to a wide range of sides. You can keep it fresh with a simple green salad, roasted vegetables, or grilled asparagus. Or go heartier with a side of potatoes or crusty bread to mop up any leftover sauce. Either way, it’s a meal that comes together easily but delivers big on taste.
Grilled cod with Romesco is ideal for those who want something light yet satisfying, fresh yet full of bold flavor. It’s just as suited for a casual weeknight dinner as it is for entertaining guests. And the best part is how little effort it takes, just quality ingredients, a hot grill, and a sauce that does all the heavy lifting.
If you’re looking to mix up your seafood routine, this dish is a standout. It’s balanced, vibrant, and a reminder that simple meals can still make a lasting impression.

Is romesco sauce really that good? Never have heard of it before! I’ll stick to ketchup for my fish.
I had my doubts about the combination, but it surprisingly worked well. A bit too oily for my taste though.
Loved the flavor! It was quick and easy to prepare. A keeper for my family dinners!
Cod is ok. Sauce tastes like what my aunt puts on everything lol. Would make again, but maybe with salmon next time.
I tried this recipe but my cod turned out dry. Maybe I grilled it too long? Not sure if I’ll try again.
Wow!! I’m gonna try this tonight! Been looking for healthy recipes!
Tried this tonight but my fish got burnt 😭. Might need a rescue for my grilling skills.
Grill n’ chill! This was amazing, will be adding it to my weekly menu!
Cod was a little delicate on my grill, but 4-5 minutes per side worked once I didn’t overcook it. Sauce came out smooth and creamy, though next time I’ll blend a bit longer for extra smoothness.
The cod turned out super dry. Maybe I cooked it too long? Not sure if I’ll try this again.
Sorry to hear that! Cod can get dry if cooked too long. Maybe try less time next time?
I think you might be overcooking it! It’s usually quick on the grill, like 4 mins max. Don’t give up!
The sauce was too nutty for me. Prefer my cod with just lemon.
I totally get it! I also love a simple lemon on my fish. Sometimes less is more!
The sauce tastes like something fancy from a restaurant. I used less garlic because I’m sensitive and it was still bold. 10/10 would serve to guests.
I’m kinda surprised it’s that good—romesco usually feels like a lot of work. But grilling cod is easy and the sauce is bold even with less garlic. Nice.
Yes!! I made this and it totally tastes restaurant-level. The sherry vinegar + smoked paprika combo is chef’s kiss.
I made this and it was meh. The romesco came out kinda bitter to me, maybe from the almonds? I’m not sure. Also grilling fish that long feels risky.
Super easy recipe! Took me under 30 minutes and my family loved it!
Pretty solid recipe. I had to grill a bit longer because my fillets were thicker, but the sauce covered it nicely. The smokiness from paprika is legit.
Interesting… I think 4-5 minutes on each side is gonna dry it out. Cod’s pretty delicate, so I’d do like 2-3 min and call it. Also, is it sherry vinegar or sherry wine? I used the wrong thing once 😅
Glad it worked out! Thick fillets always throw off the timing—4-5 min/side is more like a guideline. The paprika smokiness is the whole vibe of romesco.
Good but not great. I prefer my cod baked, to be honest.
Grilled cod, who knew? I didn’t think fish could taste this good! 😋
5 stars! I love how healthy and tasty it is. Perfect for summer!
I don’t know about “blend until smooth” — mine turned out more like a paste than a sauce, but it was still tasty on top of the fish. Also, I used regular paprika instead of smoked once… huge difference. Learn from me 😅
Made this last night—cod was flaky and the romesco tasted like a fancy restaurant. Only tweak: I added a tiny squeeze of lemon at the end. So good!
Wow—this Romesco sauce is legit. I used jarred roasted peppers because I was lazy, and it still tasted restaurant-y. The smoked paprika gives it that perfect depth.
Yes! The smoked paprika + sherry vinegar combo is sooo good. I made this for dinner last week and it tasted like it came from a bistro.
I gotta ask—jarred peppers are okay, but do you think the flavor gets worse? I’m trying this tomorrow and I’m lazy too 😅
The flavors were okay but too complicated for me. I’m just a simple cook!
Absolutely delicious! The romesco sauce adds such a great flavor to the cod. Will definitely make this again!
I followed the recipe and it came out bland. Maybe my grill temp was wrong? Also I accidentally forgot the garlic 😑—but still, not great.
Oof—no garlic would definitely make the romesco taste flatter. Also, cod is super picky: if the grill is too low it can come out kind of bland/soft, but if it’s too high it can dry out and lose flavor. Next time add a tiny pinch more salt right before serving (or a squeeze of lemon).
It was okay, but honestly, I’ve had better fish dishes. I probably won’t repeat it.
Cod on the grill can be tricky, but the timings worked. I wouldn’t call it super “smooth” after blending unless you blend longer—mine had tiny bits of almond.
Yeah, I get that “smooth” thing—mine was kinda gritty too until I blended the almonds more evenly. Next time I’ll stop to scrape the sides and blend longer.
I tried this but ended up burning the fish. Maybe grill it on lower heat? Not super happy.
Easy to follow recipe! Will make it again for sure 🙂
Romesco sauce, huh? What’s that? Isn’t it just a dip? I didn’t like the taste. Cod was fine tho.
Is it just me, or does this seem like a lot of ingredients for fish? I’m skeptical.
The sauce is amazing, but the cod timing depends on thickness. Mine were thin and 4–5 minutes each side was too much—still edible though.
Good point—cod really does vary a lot by thickness. 4–5 minutes per side is a decent starting range, but I always check for that opaque/flaky look instead of relying only on the timer. Glad yours was still edible!
Excellent recipe! I added some spice to the Romesco and it was even better. Yummy!
Not gonna lie, I didn’t have sherry vinegar so I used regular vinegar. It was fine, but not the same—still salty and smoky, just less complex.
Good to know! I always have sherry vinegar on hand, but if I’m out I’ll try regular—glad it still came out tasty even if it’s less complex.
sherry vinegar makes a big difference right? i used apple cider the first time and it tasted kinda sharp 😬 but i still ate it all. maybe less smokey? idk
The combo of cod and the sauce was just okay. I’ve had better fish recipes. 😕
The ingredients look right but my sauce tasted kinda sharp with the sherry vinegar. Maybe my peppers weren’t sweet enough. I might try less vinegar next time.
Hmm I always think romesco has a little tang but “sharp” might mean too much vinegar or not enough sweetness from the peppers. If yours were less sweet, yep, less vinegar makes sense.
Good catch—sherry vinegar can definitely make Romesco taste sharper than it should. Cutting it back (or adding a touch more olive oil/roasted pepper) usually balances it out. Let us know how it turns out!
Love it! Made it for my fam and they are begging for more.
Yum! Cod is my fav! Can you use another type of fish?
Grilled cod tastes a bit bland unless you do more seasoning. Also, my grill flare-ups burnt the edges so I got charred fish. Won’t make again.
Sorry it turned out charred! I do find cod needs a bit more pepper/salt than the recipe suggests, and I oil the grates so it doesn’t stick. Medium heat helps a lot with flare-ups.
I’m gonna be honest—4-5 min per side sounds too long for most grills. Mine overcooks fast. Also you should keep the sauce ready so you can pull the fish the moment it flakes.
Whoa, I thought Romesco was a type of fish! Turns out it’s a sauce. 🤷♂️
Romesco sauce? Never heard of it. Is it supposed to taste like BBQ?
I couldn’t get the sauce to blend right, it was chunky. What’s the secret to a smooth romesco?
Easy to follow!! But I messed up on the sauce, it turned out too chunky.
This was a hit at my dinner party! The Romesco sauce adds such a unique flavor. Will definitely make again!
I’m so glad you enjoyed it! The Romesco sauce really does elevate the dish.
Cod is such a delicate fish. I overcooked mine slightly and it got a bit dry, but the sauce saved it. Next time I’ll watch it like a hawk.
This was surprisingly restaurant-y. The romesco is smoky and bright, and the cod stayed flaky without drying out. I followed the 4-5 min per side and it came out perfect.
This recipe is amazing! The Romesco sauce adds such a great flavor to the cod. My family loved it!
Sounds fancy, but I don’t know if my family will like this. They are more into plain stuff.
I totally agree! The Romesco sauce really takes it to the next level. I’ll definitely try this again.
Meh. Forgettable. 😐
Really? I loved it! The combination of cod and that sauce was fire! 🤤
I thought it was pretty tasty! The Romesco sauce added a nice flavor. Maybe you didn’t season it enough?
This grilled cod is to die for! The Romesco sauce makes it so delicious.
I’m skeptical about grinding peppers and almonds into a “smooth” sauce—mine was more chunky than silky. Still tasty, but I’d blend longer or blend hotter?
I thought cod was a type of chicken? I guess it’s fish… Anyway, I still ate it and it tasted alright.
Cod is so dry if you grill it. I prefer baking it instead.
Grilled cod is gross and slippery. Why would anyone put that sauce on it? No thanks.
Romesco? What is that? Sounds fancy but I’m just a simple guy. Cod is good tho.
This was a flop! Cod is too bland, and the sauce wasn’t even good. What are people raving about?
I totally disagree! I think the Romesco sauce brings everything together. Maybe you just didn’t season it well?
Not gonna lie, I was skeptical about blending peppers with almonds, but the texture was awesome. Only thing: my sauce got a bit too thick, so I added a splash more olive oil.
Grill cod for 4-5 mins? Nah… more like 10 mins on high heat for me!
Pretty tasty, but my sauce was way too thick after blending. I had to add a splash more olive oil to loosen it. Still totally worth it.
This recipe is awesome! The romesco sauce really makes the dish pop.
Simple and tasty! I used frozen cod fillets and it turned out great. Easy to follow!
Glad to hear it turned out good! Frozen cod is such a lifesaver sometimes. I’ll have to try the Romesco sauce too!
Not bad. I used jarred roasted red peppers and it tasted okay, but not as deep as when I’ve made romesco before. Maybe next time I’ll roast them myself.
Made this last night—romesco is so flavorful. I used a little extra smoked paprika and it really popped. Cod stayed flaky and not dry.
I didn’t have sherry vinegar, used lemon juice instead. Still tasted good!
I don’t know about this recipe. Fish with bells peppers is weird. I prefer fried fish.
Sooo good! I added a pinch of red pepper flakes for a kick.
Cod grill timing is everything! Mine went a little too long and got dry, but the flavor was on point. Next time I’ll pull it at 4 minutes per side.
I tried it but used different fish. It didn’t work out same. Cod is better, I guess!
Not sure if I did it right but the fish was too dry. Maybe I overcooked it? Gonna try again and see!
I tried this but it was too bland for me. Needs more seasoning!
I think it really depends on your taste buds! I added more spices and it was delicious! Maybe try that next time?
I messed up and put in too much vinegar… sauce tasted kinda sharp. I balanced it by adding more almonds and olive oil. Lesson learned 😅
Oof, too much vinegar can definitely make romesco taste sharp 😅 But hey—you adjusted with almonds and olive oil, that actually makes sense. Next time just start with less vinegar and taste.
Sharp?? I would just add a little more roasted pepper too. Still sounds tasty though—romesco is kinda forgiving as long as you keep the balance right.
Why do people think grilled fish is fancy? It’s just fish on a grill.
This recipe is great but where I live, we don’t have cod!! Can I use tilapia instead? Did anyone try that? 🤔
This was restaurant-level good. The romesco sauce tastes smoky and bright at the same time—perfect with cod. I didn’t have smoked paprika so I used regular and it was still great.
This recipe is fantastic! The Romesco sauce adds a delicious kick to the cod. Will definitely make it again!
I’m glad you loved it! The Romesco sauce is such a game changer for fish. Did you try it with any other dishes?
I dunno… sounds good but how can you be sure it tastes so good? Did you really make it or just tasting from someone else?
5 stars! cod on grill tastes restaurant. romesco is best thing ever. lol
I think 1 tsp salt is kinda not enough for 24 oz of fish? I ended up salting heavier and it tasted better. Sauce was good though.
This was delicious! The Romesco sauce really made it pop. 5 stars!
I totally agree! That sauce is incredible, I could eat it on everything!
Romesco sauce? I thought it was just spicy ketchup! Really unsure about that.
Simple and delicious! 😋 My family loved it! Just made some rice on the side, perfect!
I’m so happy to hear that your family enjoyed it! The rice sounds like a great addition too! 😊
I was skeptical about blending everything until smooth, but wow—texture is great. Only change: I added a squeeze of lemon at the end for brightness.
I’m skeptical about blending roasted peppers + almonds for sauce, but wow—actually it worked. I added a pinch of chili flakes because I like heat.
Wait… peppers + almonds blended into a sauce? That’s wild. I feel like it would be too thick or nutty, but if it worked for you maybe I’ll try. Did you use blanched almonds or just normal toasted ones?
Honestly that combo sounds weird on paper, but I love that you tried it anyway. Romesco is kind of magic like that—great call adding chili flakes!
This dish was absolutely delicious! The Romesco sauce added a nice kick. Will definitely make again!
I’m so glad you enjoyed it! The Romesco sauce really does elevate the dish. Can’t wait to try it myself!
