  • 4 fillets cod 6 ounces each
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground, to taste
  • 2 cups red bell pepper roasted and peeled

  • 2 cloves garlic minced
  • 1 tablespoon sherry vinegar

Instructions
 

  • Preheat grill to medium-high heat.
  • Brush cod fillets with olive oil and season with salt and pepper.
  • Grill the cod for 4-5 minutes on each side or until the fish is opaque and flakes easily with a fork.

      Oof—no garlic would definitely make the romesco taste flatter. Also, cod is super picky: if the grill is too low it can come out kind of bland/soft, but if it’s too high it can dry out and lose flavor. Next time add a tiny pinch more salt right before serving (or a squeeze of lemon).

    Tried this tonight and the romesco is legit. Super flavorful without being heavy. Cod grilled up perfectly too—4-5 minutes a side was spot on for me.

    Not bad, but why sherry vinegar? I accidentally used regular vinegar and it was still okay. Also 2 cups peppers seems like a lot unless you’re roasting a ton of them.

    Easy to make but I didn’t have sherry vinegar so I used regular vinegar… still tasted good!

      You can definitely use another type of fish! Salmon or tilapia might work well. Just keep an eye on the cooking time, they may cook differently.
