Ingredients
- 4 black cod fillets
- 4 tbsp white miso paste
- 2 tbsp mirin
- 2 tbsp soy sauce
- 2 tbsp sake
- 1 tbsp sugar
- 1 tbsp vegetable oil
- 2 Green onions thinly sliced
- 2 packs udon noodles
Instructions
- In a small bowl, whisk together the miso paste, mirin, soy sauce, sake, and sugar until well combined.
- Brush the miso glaze on both sides of the black cod fillets.
- Heat the vegetable oil in a large non-stick skillet over medium heat.
- Add the black cod fillets to the skillet and cook for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork.
- Meanwhile, cook the udon noodles according to the package instructions.
- Divide the cooked udon noodles among 4 plates and top each plate with a black cod fillet.
- Garnish with green onions and serve.

You can definitely use another type of fish! Salmon or tilapia would work well, just adjust the cooking time a bit.
