Ingredients
  

  • 2 tbsp olive oil
  • 1 onion chopped

  • 1 head escarole chopped
  • 1 can diced tomatoes 14.5 oz
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the chicken to the pot and cook until browned on all sides, about 5 minutes.
