Artichoke Hearts Gratin

February 5, 2026

Artichoke hearts gratin is a rich and elegant dish that transforms tender artichokes into a creamy, golden baked delight. Perfect as an appetizer, side dish, or even a light main course, this gratin combines delicate flavors with a satisfyingly crispy topping that makes every bite irresistible.

The star of the dish is the artichoke hearts, either fresh, jarred, or frozen, which are tenderized and layered in a creamy sauce. A blend of butter, garlic, and cream or béchamel forms the base, while cheese, often Gruyère, Parmesan, or a mix, adds depth, richness, and a slightly nutty flavor. Herbs such as thyme, parsley, or tarragon enhance the natural sweetness of the artichokes, giving the dish a fragrant, savory note.

The gratin is topped with breadcrumbs or additional cheese, which browns in the oven to create a golden, crispy crust. This contrast between the creamy interior and the crunchy topping is what makes artichoke hearts gratin so appealing. Each spoonful offers a perfect balance of textures and flavors, making it a favorite at holiday dinners, dinner parties, or casual weeknight meals that deserve a touch of elegance.

This dish is versatile and forgiving. You can prepare it ahead of time and bake it just before serving, or customize it by adding sautéed mushrooms, spinach, or a hint of lemon zest for brightness. It pairs beautifully with roasted meats, grilled fish, or simply with a fresh green salad for a lighter option.

Artichoke hearts gratin celebrates the natural flavor of the vegetable while elevating it with creamy, cheesy indulgence. Its comforting richness, aromatic herbs, and golden crust make it a dish that feels both special and approachable. Whether served as a starter or a side, it is sure to impress and satisfy anyone lucky enough to enjoy it.

Too much cheese for my liking. Next time I will use less Parmesan.

I didn’t have lemon juice so I used vinegar… it was okay.

  8. 2 stars
This looked better than it tasted. Kind of bland, I think it needed more spices.

    1. User avatar allan.beer11 says:

      3 stars
Bland? Really? I thought it was just fine. Maybe you just didn’t season it enough or something.

    2. User avatar terence.quitzon says:

      4 stars
I totally agree! It needed some kick. I added cayenne pepper and it made all the difference.

  9. 5 stars
I love artichokes! This is a hit! 🍕

I dunno… artichokes are kinda weird. Not sure if I’ll like this.

I tried this and it was okay, but I think I would rather have spinach dip instead. Just my opinion.

YUM! My new favorite. I added extra cheese ’cause you can never have too much cheese, am I right?

  14. User avatar tissues_with_issues says:

Is this even healthy? I feel like it’s just cheese and carbs. I dunno, sounds tasty but I’m skeptical.

  15. 2 stars
Just had it for dinner. It was too salty for my taste. Maybe less salt next time?

  16. 2 stars
Not sure about the texture… it was kinda mushy and the breading didn’t really stick. But I might have messed it up.

    1. 4 stars
I’ve had that problem too! Sometimes the artichoke hearts release too much moisture. Maybe try pressing them between paper towels next time?

    1. User avatar miquel.hermiston1956 says:

Yeah, I think it’s a good idea to reduce the salt. Different brands of ingredients can be saltier than others!

Yum! I added some chili flakes for a kick. Definitely making this again!

Where do you even buy artichoke hearts? I couldn’t find them anywhere! Not even at Walmart.

    1. 4 stars
You should try specialty grocery stores or look online! I’ve seen them at Trader Joe’s before.

    2. User avatar smartestRedditor says:

Just go to a local farmer’s market! Walmart ain’t got everything, you know?

  25. User avatar khalilah.metz54 says:

I’m not convinced about the breadcrumbs amount—mine felt dry and the mixture didn’t really cling to the hearts. Next time I’ll add a touch more oil.

  26. User avatar hipolito.schmeler says:

    4 stars
Pretty good, but I think 25 minutes was a bit short for my oven. Also, I used dried garlic by accident and it still worked, just not as punchy.

  27. User avatar denisha.ullrich says:

    4 stars
Easy peasy! I used frozen artichokes and it worked just fine. Will make again!

  28. User avatar buster.west says:

I thought this would be better, but it was kinda bland. Not my fave. 🙁

    1. 3 stars
I totally get what you mean! I had high hopes too. Maybe a little more seasoning next time could help? 🤷‍♀️

    2. User avatar grayce.rowe96 says:

Made this tonight—super easy and the topping gets nicely golden. I added a little extra lemon zest and it really brightened it up.

  33. User avatar Frost Atronach says:

    5 stars
This tastes kinda fancy for how simple it is. I used jarred artichoke hearts and drained them extra well so it didn’t get watery.

    1. 3 stars
Sounds good but 400°F for 30 minutes feels like too long? I tried something similar once and the breadcrumbs dried out. Also I didn’t have Parmesan so I used shredded mozzarella… wasn’t the same. Still, nice idea though.

    2. User avatar nicolas.cruickshank says:

      5 stars
Totally agree—this gives “I spent all day on it” vibes. I did the same thing with the jarred artichokes and it came out not watery at all. That lemon + garlic combo really pops.

  34. User avatar Jeffie VonRueden V says:

    2 stars
Why is it called gratin if there’s no cream or cheese sauce? I mean it’s good, but it feels like baked breadcrumbs + artichokes, not gratin.

    1. 4 stars
Good question! “Gratin” can just mean baked until browned/crispy on top, not necessarily a cream sauce. This seems more like a cheesy/breadcrumb gratin.
