Lasagna soup is a comforting and flavorful twist on the classic Italian lasagna, combining all the rich, hearty elements of the dish in a cozy, broth-based soup. It’s the perfect meal for colder months, offering the same delicious flavors of lasagna -meat, tomatoes, cheese, and pasta, without the effort of layering and baking.
The base of soup starts with ground beef or sausage, which is browned and cooked with onions and garlic for a savory, aromatic foundation. A rich tomato sauce, along with diced tomatoes and beef broth, is added to create the base of the soup, infusing it with all the familiar flavors of a traditional lasagna. The soup is simmered to allow the flavors to meld, making it rich and satisfying.
The pasta used in soup is usually broken-up lasagna noodles, which cook directly in the soup, absorbing the flavorful broth and adding heartiness to each spoonful. The soup also features layers of cheese, just like the classic lasagna. Ricotta or cream cheese is stirred in for creaminess, while mozzarella and Parmesan are added to top the soup, making each serving deliciously cheesy and indulgent.
What makes lasagna soup so great is that it’s infinitely customizable. You can adjust the seasonings, adding Italian herbs like basil, oregano, and thyme, or add extra vegetables like bell peppers or mushrooms for more texture and flavor. For a spicier version, red pepper flakes or hot sauce can be stirred in to give it a little kick.
The soup is finished with a sprinkle of fresh basil or parsley for color and freshness. The combination of flavors – savory, creamy, and cheesy, makes lasagna soup just as comforting as the traditional dish, but in a cozy, easy-to-make soup form.
Serve it with a side of crusty bread or a simple salad, and you’ve got a hearty meal that’s perfect for family dinners, weeknight meals, or even meal prep. For drinks, try pairing it with a light white wine like Pinot Grigio or a crisp sparkling water for a refreshing contrast.
This Italian soup is a fun and delicious way to enjoy all the flavors of lasagna in a simpler, quicker form, perfect for cozy nights and family gatherings.

This Lasagna Soup is a game changer! So rich and comforting. My whole family loved it! 🌟
I don’t know, I expected more flavor. It was kinda bland. 🤷♂️ Maybe add more spices next time?
I totally get what you mean! I found it a bit bland too. A pinch more salt and some Italian seasoning really helps! 😋
I followed the instructions exactly, but it came out too liquidy. Did I do something wrong? Gonna try again.
Wow wow wow, best soup ever! I love how cheesy it gets. Will definitely recommend to my friends.
Lasagna is supposed to be layered, not soupy!! 😤 Fails the traditional test for me.
Wasn’t expecting much, but this soup is packed with flavor. Plus, it’s easy to make, which is a bonus for me.
I totally agree! It’s super easy and tastes like a restaurant dish. My kids loved it!
First time making this & it was fun! Just forgot to garnish with basil 🙁. Still tasted great!
I dunno, I don’t see how breaking up the noodles makes it lasagna. Seemed like a waste of good ingredients.
Sounds strange tbh, lasagna without whole noodles? I dunno, I’d just stick to the classic method.
I understand your point, but breaking up the noodles allows it to absorb more flavor. It’s kinda like lasagna but in a soup form!
I dunno about all this soup stuff. Isn’t lasagna supposed to be solid? Seems weird to me.
This lasagna soup was incredible! So hearty and packed with flavor. It’s perfect for cold nights.
I dunno, it was ok, but I prefer my lasagna with layers not in soup form, ya know?
Yum! I added some bell peppers and it turned out great! Will definitely make it again.
Tried it yesterday, and my family LOVED it! So much better than regular lasagna. Definitely making it again!
I made this for my family, and they practically licked their bowls clean! Definitely a keeper!
That’s awesome to hear! Lasagna soup is such a cozy dish. Did you add any extra veggies? 🍅
I dunno, sounds kinda messy to me. Soup and lasagna? Why not just have both separately? 🤔
Just okay. Too many flavors all at once, felt overloaded. Maybe wouldn’t add garlic next time.
Tried this for dinner and it was a disaster. The noodles turned mushy and it was super bland. Never again!
Lasagna soup? Sounds funny, but I really liked it! Kids asked for seconds, thumbs up!
This soup is amazing! I never thought of lasagna like this. So cozy and tasty! Will make it again.
Yum! My kids loved it! I added some spinach for extra veggies. So filling and delicious!
That’s great to hear! Adding spinach is a smart idea for extra nutrients. I’ll try that next time too!
Delicious for a cold day! I like it better than regular lasagna. Easy to make too.
I made this last week and it was a hit with the family! Much easier than traditional lasagna!
Sounds good, but soup?? What about the noodles? Do they get mushy?
It was okay, but I thought the broth was too watery. Maybe I just need to cook it longer? Not sure if I’ll make it again.
Heard you can use any type of pasta, so I used spaghetti instead. Wasn’t the same, but still pretty good!
Wait a sec… Is this recipe even lasagna? It’s soup! Just call it soup, lol.
Lasagna soup? Pffft. Sounds like a lazy way to make dinner. My grandma would roll in her grave! 😂
This lasagna soup is super delicious! I added some mushrooms for extra flavor. Everyone loved it!
Too complicated for me! I prefer my lasagna just baked, not in soup form. 🤷♂️
I get that! Lasagna can be so traditional. But this soup looks super cozy for a winter night! 😍
Soup form? Nah, no thanks! Just give me a plain ol’ lasagna. This recipe is just too much work! 🙄
This recipe is amazing! I’m not a chef, but I followed it and it turned out so good. The flavors are just right!
Really? It sounds good, but I’ve had bad luck with lasagna noodles in soup. They always turn mushy for me. 🤔
I’m so glad you liked it! This soup is super easy, and I love how you can adjust the spices to your taste. Great job for not being a chef!
Yum! Adding more cheese is the way to go! Can’t have enough mozzarella, am I right?
