Baked Stuffed Tomatoes with Rice and Herbs

Baked stuffed tomatoes with rice and herbs are a beautiful celebration of Mediterranean simplicity. This dish manages to be both humble and impressive – the kind of thing you’d find on a sun-drenched Greek island or at an Italian family table. It’s all about the ingredients: ripe summer tomatoes, fresh herbs, and perfectly seasoned rice, baked until tender and aromatic.

The appeal starts with the presentation. Plump tomatoes, hollowed out and filled with a savory rice mixture, are arranged snugly in a baking dish, their tops placed like little hats. As they roast, the tomatoes soften and sweeten, the juices mingle with the filling, and the herbs release their fragrance, creating a dish that’s more than the sum of its parts.

The rice stuffing is the real heart of this recipe. Usually cooked partially before filling the tomatoes, it’s mixed with parsley, basil, mint, garlic, and often a little onion or scallion for depth. A touch of olive oil and maybe a few pine nuts or currants can elevate the flavor even more. The balance is key – the herbs should brighten the dish without overpowering it, and the rice should be tender but not mushy after baking.

What makes this dish shine is its versatility. It can be served hot, warm, or at room temperature. It works beautifully as a side dish, but it’s just as satisfying as a vegetarian main course, especially with a wedge of feta or a dollop of Greek yogurt on the side. In some traditions, you might find potatoes nestled between the tomatoes, soaking up all the goodness and adding another layer of comfort.

Baked stuffed tomatoes are also ideal for making ahead. They reheat well and somehow taste even better the next day, after the flavors have had time to meld. It’s one of those dishes that feels timeless, rooted in tradition, yet endlessly adaptable. Light but hearty, elegant yet rustic, this dish is a quiet showstopper that reminds you how much joy can come from simple, honest cooking.

1 star. This didn’t work for me. The cheese burned while the tomatoes were still hard. Not doing this again.
