Ingredients
  

  • 2 medium zucchini grated
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1/4 cup green onions chopped
  • 1 tsp salt
  • 1 tsp black pepper freshly ground
  • 1/4 cup Parmesan cheese grated
  • 2 tbsp olive oil for frying

Instructions
 

  • Grate the zucchini and squeeze out excess liquid using a clean kitchen towel.

      Uh… frying scares you? Fair, but the oil is literally why they crisp. If you bake, they might turn out kinda mushy unless you squeeze the zucchini REALLY dry. Maybe use less batter-y moisture and don’t overcrowd the pan.

      Yes—baking should work! I’ve done something similar by forming patties and baking on a lightly oiled sheet at ~425°F (220°C) until crisp, flipping halfway. You’ll probably get less “fritter” browning than frying, but it’ll still be tasty and much lighter.
