There’s something incredibly satisfying about a perfectly baked russet potato – fluffy on the inside, crisp on the outside, and ready to be transformed into a complete meal. When you take that classic comfort food and stuff it with all kinds of savory fillings, you elevate it into something even more memorable.
Stuffed russet potatoes are the kind of dish that walks the line between cozy and impressive. They look hearty and rustic, but they’re also a canvas for creativity. You can dress them up with rich flavors like sautéed mushrooms, smoky bacon, melted cheese, or even seasoned vegetables. Whether you lean toward meaty or meatless, classic or modern, the baked potato can handle it.
The real beauty of this dish is its flexibility. Stuffed potatoes can work for lunch, dinner, or even as a show-stealing side at a gathering. Preparing them is relatively simple, and the final result always feels like more than the sum of its parts. The skin turns golden and crisp in the oven, while the inside becomes the perfect base for mixing in creamy, flavorful additions.
These potatoes are also a great way to use up leftovers. A bit of roasted chicken, steamed broccoli, or shredded beef from last night’s dinner can all find new life inside a baked potato. Add a sprinkle of cheese and return them to the oven for a quick second bake, and you’ve got something delicious with very little extra effort.
Presentation-wise, they look impressive without requiring much skill. Serve them hot with a small salad or a bowl of soup, and you’ve got a comforting, well-rounded meal that feels thoughtful and filling.
Stuffed russet potatoes remind us that you don’t need fancy ingredients or complicated methods to create something that feels special. All it takes is a humble spud, a hot oven, and a little imagination. Whether you’re feeding a family, hosting a casual get-together, or just craving something warm and satisfying, this dish delivers every time.

Ingredients
- 4 large russet potatoes washed and dried
- 1 cup cheddar cheese shredded
- 1/2 cup sour cream
- 4 slices bacon cooked and crumbled
- 2 tablespoons butter melted
- 2 tablespoons green onions chopped
- to taste salt and pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Pierce each potato a few times with a fork. Place them directly on the oven rack and bake for about 45-60 minutes until tender.
- Once the potatoes are done, remove them from the oven and let them cool down enough to handle.
- Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch of shell, and place the scooped-out flesh into a bowl.
- Mash the potato flesh with melted butter, sour cream, cheddar cheese, bacon, and green onions. Season with salt and pepper to taste.
- Fill the potato shells with the mashed mixture and place them on a baking sheet.
- Bake for an additional 15 minutes until the tops are lightly golden and the cheese is melted.
- Garnish with extra green onions and serve hot.

So simple and delicious! This is my go-to recipe now. Perfect for a lazy weekend.
Glad you love it! Perfect for lazy days. I made it last weekend too!
Looks good but i dunno about the bacon. Can you even taste the potato? Seems like a lot of stuff.
Simply amazing! Took them to a potluck and they were the hit of the night! Everybody asks for the recipe!
I’m so glad they turned out well for you! They are super tasty and easy to make. Going to try this recipe myself! 😋
I dunno, they look good, but who doesn’t like regular potatoes? Why are these so special? Just sounds like extra work.
Waaay too much bacon, do less! The cheese is great tho. Next time, just a sprinkle.
I dunno, maybe im not doing it right? Mine turned out kinda mushy. I like them more crispy. 😕
They were alright, but I think the cooking time was too long. Mine were almost burnt. Maybe need a little tweaking.
You know, some ovens cook hotter than others. Just check them a bit earlier next time!
Yeah, I had the same issue! They were getting kinda crunchy on the outside. Maybe try lowering the temp a bit?
Too complicated for me. I just poke and bake the potatoes, then throw cheese on top. Why the fuss?
Microwaved the potatoes instead of baking them… still turned out pretty good. 😂
These stuffed potatoes are divine! My whole family loved them. I added a bit of garlic powder too, yum!
Just a heads up, these are NOT healthy. But who cares, they taste so good!
Yeah, who needs healthy when it tastes like this? I’m definitely making these!
