Preheat your oven to 400°F (200°C).
Pierce each potato a few times with a fork. Place them directly on the oven rack and bake for about 45-60 minutes until tender.
Once the potatoes are done, remove them from the oven and let them cool down enough to handle.
Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch of shell, and place the scooped-out flesh into a bowl.
Mash the potato flesh with melted butter, sour cream, cheddar cheese, bacon, and green onions. Season with salt and pepper to taste.
Fill the potato shells with the mashed mixture and place them on a baking sheet.
Bake for an additional 15 minutes until the tops are lightly golden and the cheese is melted.
Garnish with extra green onions and serve hot.
