Ingredients
  

  • 4 large russet potatoes washed and dried
  • 1 cup cheddar cheese shredded
  • 1/2 cup sour cream
  • 4 slices bacon cooked and crumbled
  • 2 tablespoons butter melted
  • 2 tablespoons green onions chopped
  • to taste salt and pepper

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Pierce each potato a few times with a fork. Place them directly on the oven rack and bake for about 45-60 minutes until tender.
  • Once the potatoes are done, remove them from the oven and let them cool down enough to handle.
  • Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch of shell, and place the scooped-out flesh into a bowl.
  • Mash the potato flesh with melted butter, sour cream, cheddar cheese, bacon, and green onions. Season with salt and pepper to taste.
  • Fill the potato shells with the mashed mixture and place them on a baking sheet.
  • Bake for an additional 15 minutes until the tops are lightly golden and the cheese is melted.
  • Garnish with extra green onions and serve hot.
