Zucchini fritters are a simple, tasty, and versatile dish that transforms humble zucchini into golden, crispy patties full of flavor. Light on the inside and perfectly crispy on the outside, these fritters are an easy way to enjoy vegetables while feeling like you’re indulging in comfort food. They are quick to prepare, budget-friendly, and a great option for lunch, dinner, or even as an appetizer or snack.
The key to great zucchini fritters is removing as much moisture as possible from the zucchini. Zucchini naturally holds a lot of water, so after grating, it’s important to squeeze out the excess liquid using a clean kitchen towel or paper towels. This step ensures the fritters are crisp rather than soggy.
The grated zucchini is then mixed with simple ingredients that bring the batter together. Typically, that includes flour or breadcrumbs, eggs to bind everything, and a variety of seasonings. Garlic, green onions, black pepper, and herbs like parsley, dill, or basil add flavor and freshness to the mixture. Once combined, the batter is scooped into a hot pan with a little oil and cooked until golden brown on both sides.
Zucchini fritters are incredibly versatile. You can add shredded carrots, corn, or cheese like feta or parmesan for extra texture and taste. They’re also easy to make gluten-free by using almond flour or gluten-free flour blends.
Serve them warm with a simple dipping sauce like sour cream, Greek yogurt, tzatziki, or even a squeeze of lemon for brightness. They pair well with salads for a light meal, alongside grilled meats for a hearty dinner, or even tucked into a sandwich or wrap.
Not only are zucchini fritters delicious, but they’re also a clever way to use up an abundance of summer zucchini. Whether you’re looking for a vegetarian dish, a tasty snack, or a side for your main meal, zucchini fritters are crispy, flavorful, and satisfying every time.

Ingredients
- 2 medium zucchini grated
- 1/2 cup all-purpose flour
- 2 large eggs beaten
- 1/4 cup green onions chopped
- 1 tsp salt
- 1 tsp black pepper freshly ground
- 1/4 cup Parmesan cheese grated
- 2 tbsp olive oil for frying
Instructions
- Grate the zucchini and squeeze out excess liquid using a clean kitchen towel.
- In a large bowl, combine the grated zucchini, flour, eggs, green onions, salt, pepper, and Parmesan cheese. Mix until well combined.
- Heat olive oil in a large skillet over medium heat. Spoon tablespoons of the zucchini mixture into the skillet, flattening them into fritters.
- Cook for about 3-4 minutes on each side until golden brown. Transfer to a paper towel-lined plate to drain any excess oil.
- Serve immediately with your choice of dipping sauce.

They were good but kind of eggy? Like overpowering egg flavor. I used large eggs like the recipe says though. Any tips to balance that?
I tried this and they stuck to my pan even with oil. Maybe my skillet wasn’t hot enough or I need parchment—either way, messy first batch.
So good. 10/10. wow.
Honestly, I thought these would taste bland, but the black pepper and cheese carried it. I did use less flour and they still held together—nice!
They’re okay, but mine came out kinda soggy. I think I might have skipped the squeezing step. Not sure I’ll try this again.
Could you bake these instead of frying? I’m trying to be healthier and frying in oil scares me a little. Either way, recipe sounds delicious.
Uh… frying scares you? Fair, but the oil is literally why they crisp. If you bake, they might turn out kinda mushy unless you squeeze the zucchini REALLY dry. Maybe use less batter-y moisture and don’t overcrowd the pan.
Yes—baking should work! I’ve done something similar by forming patties and baking on a lightly oiled sheet at ~425°F (220°C) until crisp, flipping halfway. You’ll probably get less “fritter” browning than frying, but it’ll still be tasty and much lighter.
I used pre-grated zucchini and it was watery. Lesson learned: definitely towel-squeeze. Otherwise the batter didn’t really hold shape.
Good recipe, but I forgot the cheese! Oops 😅
I didn’t have parmesan cheese, used cheddar instead. Still turned out great!
Cheddar sounds yummy! I might try that next time. 😋
Zucchini is gross. Why would anyone eat this? Yuck.
Best fritters I ever ate! Never going back to regular fries.
Really? I don’t know… I usually like my fries crunchy. Fritters sound a bit soggy to me.
I totally agree! These fritters are sooo much better than fries. Love that crispy texture!
The measurements are a little weird to me—2 medium zucchini but only 1/4 cup Parmesan? I used more cheese and it tasted better to me. Not complaining.
One word: delicious.
These were shockingly easy and honestly delicious. My kid asked for seconds (which never happens). I’ll be saving this recipe.
Agreed! I didn’t expect “fritters” to be this simple. Squeezing the zucchini dry is the whole key—made mine crisp instead of soggy. Delicious with a quick yogurt + lemon dip too.
I tried these but I think I used too much zucchini or didn’t squeeze enough… mine came out kinda mushy 😅 Still tasted good though. Next time I’m gonna ring it out way harder. Also 2 tbsp oil wasn’t enough for my pan, I ended up adding more.
These were amazing! I added some garlic powder and it took them to the next level. Will definitely make again!
These fritters are so easy to make and absolutely delicious! I added some garlic and they turned out amazing.
I used yellow squash instead and they tasted great! 🥒
Yellow squash? That’s a neat twist! I’ll have to try it like that! 🌼
Pretty good, but mine got a little soggy. Next time I’ll squeeze the zucchini longer and maybe use a touch less flour. Flavor is solid though!
Made these last night—so crispy on the outside and soft inside. The squeezing part really matters. I served with yogurt + lemon and it was perfect.
Not bad, but mine came out kind of soggy even after squeezing. Maybe I didn’t press hard enough, or the oil temp was off. Still ate them though.
Not gonna lie, I wasn’t convinced until I tried one fresh. They’re like zucchini latkes for people who don’t have the patience. Would recommend.
Okay wait—“zucchini latkes for people who don’t have the patience” is EXACTLY how I feel 😂 I’m trying these this week. Fresh fritters + quick cook time sounds perfect.
Interesting idea but I’m confused—do you really need to squeeze the zucchini with a towel? I usually just salt it and wait… also 1/2 cup flour seems like a lot? I’ll give it a shot though.
I tried with gluten-free flour instead of AP and they browned nicely, but the texture was slightly different—still good. Might need an extra egg or more binding.
These turned out so crispy on the outside and still tender inside. I squeezed the zucchini longer than I thought I needed to, and it really helped. Will definitely make again!
Yes! That’s exactly what I’m hoping for—crisp edges but not dry in the middle. I always squeeze extra too, glad it worked for you.
Why frying?? Shoulda just baked them. I did bake once and it was kinda dry. Fried version seems better, but cleanup is a pain lol.
Frying is definitely the move for texture—crispy outside, tender inside. I always squeeze the zucchini *really* well, otherwise they get watery and sad. And yeah, cleanup is the price 😅
Maybe bake them at like 425F? Last time I tried baking zucchini stuff it was dry too, so I get your point. But frying sounds like a lotta oil… paper towels help though.
These are so delicious! I made them for my kids and they loved it!
So glad your kids loved them! They’re really easy to make too. Did you serve them with any sauce?
Yum! I dunk these in ranch dressing and it’s a game changer!
These are soooo good! My kids loved them. Will definitely make again!
Quick and simple! Will make again, thanks!
Easy recipe! I added some garlic to the mix, made it way tastier!
I don’t think garlic belongs in fritters. It’s supposed to be light, not heavy. Just saying.
Garlic sounds like a great idea! I’ll have to try that next time. Thanks for the suggestion!
I’m skeptical about frying zucchini because it always turns into mush for me… but wow, these actually held together. I did add an extra spoon of flour just in case.
Totally get the mush fear 😅 Squeezing the zucchini dry is everything. Your extra spoon of flour probably helped a lot—nice save!
Not bad at all—easy weeknight recipe. Mine weren’t super crispy though, maybe I didn’t drain the zucchini enough. Still tasted great.
Perfect for a snack! 😍
Pretty good. I added a little garlic powder because… why not. Next time I’ll flatten them a bit thinner so they cook more evenly through.
Love that idea—garlic powder really works with zucchini fritters. Flattening thinner makes sense too; mine get a bit doughy in the middle if they’re too thick.
I don’t know… I tried them once and they fell apart. Maybe I didn’t squeeze the zucchini enough? Garlic powder might make them taste better though. But thinner? idk.
Zucchini fritters? More like a flop! Never again!
Pretty tasty, but mine were a little salty. Next time I’ll maybe use 1/2 tsp salt since the Parmesan is salty too. Still a solid recipe though.
Made these last night—crispy on the outside, tender in the middle. The squeezing the zucchini part really matters. I used a quick Greek yogurt dip with lemon and it was perfect.
Yes!! The squeeze step is everything—my first batch was soggy until I started really wringing them out. Greek yogurt dip sounds spot on 👌
Whole thing felt bland without sauce. Like, okay, zucchini and cheese, but I need more seasoning. Also 1 tsp salt seems like a lot for me.
These are amazing! So crispy and delicious. My kids loved them!
Not my favorite… they turned out too soggy. I think I might have skipped the squeezing part. 😕
Soggy… that sucks! Maybe try grating them smaller next time? Good luck!
I totally understand! I’ve had similar issues with zucchini fritters before. It’s all about that squeezing! 😄
I followed the recipe but mine were a little soggy. I think I didn’t squeeze out enough liquid, even though I wrung them pretty well.
My first batch was greasy. I waited too long to flip and the heat was kinda high. Second batch was better. Great concept, just watch the oil.
These turned out so crispy on the outside and tender inside—exactly what I was hoping for. Squeezing the zucchini really matters.
I tried it but maybe my zucchini was way too wet? Mine kinda fell apart a bit and weren’t super crispy, even though I squeezed it. Could add more flour next time?
Love this! I did the squeeze-a-lot method too and they stayed crispy without going soggy. Great instructions—mine turned out the same way.
Soo easy. I made them for breakfast and ate like 6. Would definitely do again with sour cream dipping sauce.
Honestly, I thought fritters would be more complicated. This was straightforward and the seasoning is spot on. Parmesan gives it a nice salty punch.
Five stars. So good. My kids ate them without complaining (rare event).
Zucchini? My family ain’t eatin that stuff! But I gave it a shot and they surprisingly liked it. Who knew??
This is just a glorified pancake. Not impressed!
But they are different! Pancakes don’t have zucchini! Maybe you just cooked them wrong?
I think you’re missing out! These are way more tasty than a pancake. Have you tried them?
3-4 minutes per side might be true for your stove, but mine were pale after that. I ended up doing like 6 minutes total each side… still tasty though.
Too oily for my taste. Next time I’ll reduce the oil amount.
The pepper amount is great, but the salt might be too much for me personally. Still tasty though—would make again with slightly less salt.
These came out so crispy on the outside and tender inside! I squeezed the zucchini really well and it made a huge difference. Delicious with a yogurt-garlic dip.
I tried this but mine stayed kinda soft inside and the batter felt too thick? I used less cheese maybe. Still tasty though, and my kid ate them anyway lol. Any tips for making them crispier?
Yes!! I did the squeezing step too and it was like night and day—crispy and not soggy. The yogurt-garlic dip is a must. Will make again for sure.
Only thing—2 tbsp olive oil for frying seems low for a whole skillet? Mine got a little stuck. I ended up adding a bit more oil and it fixed it.
Hmm I used the full 2 tbsp in my pan and mine turned out okay, but I also made sure to squeeze the zucchini really dry. If there’s extra moisture, it kinda makes them stick.
Totally agree—2 tbsp can be tight depending on your skillet size. Adding a touch more oil makes flipping way easier. Glad it worked out!
These turned out so crispy on the outside and tender inside—exactly what I wanted. I squeezed the zucchini really well and the batter behaved.
A relative told me about this recipe, but I didn’t have Parmesan, so I used cheddar. Still yummy!
Cheddar sounds interesting! I might try that too. 📅
Good flavor, but mine were a little soft—maybe I didn’t drain enough moisture. Next time I’ll wring the zucchini harder and let the batter sit for a few minutes.
These came out crispy and flavorful! I squeezed the zucchini really well, and that made a huge difference. Loved the green onion + Parmesan combo—will make again.
Yes!! The squeezing part is the whole secret—glad it worked for you. Green onion + Parmesan is such a good combo. Definitely trying this again too.
5/5 for taste, 2/5 for effort 😅 Squeezing zucchini is annoying. But once they cooked, they were golden and flavorful. Would recommend if you don’t mind the work.
Wow, the flavor is legit. The Parmesan + green onions combo is such a win. I ate them with sour cream and it was perfect.
I made these yesterday, and my kids loved them! Who knew zucchini could taste this good!
I followed it mostly, except I used 1/3 cup feta instead of Parmesan. Still delicious. The green onions really pop. 10/10 comfort snack.
I followed it pretty much exactly, but my fritters started falling apart when flipping. Next time I’ll try adding a touch more flour or cooking a little longer before turning.
Never thought of zucchini like this! Very good, will make again for sure.
Are you sure it tastes good? Zucchini fritters sound weird to me. Might stick to regular fries.
I tried this recipe and it was absolutely amazing! I never liked zucchini before but now I’m hooked. Thanks for sharing!
Super simple and delicious. My kids actually asked for seconds, which never happens. Definitely saving this recipe.
I dunno… mine turned out kinda mushy. Maybe I didn’t squeeze enough water out?
I followed the recipe to the letter but they turned out mushy. What did I do wrong?
Quick and easy! Added some garlic powder for flavor and it was SO good.
I’m no chef, but these were easy. I just hope I didn’t overcook—mine got golden in like 2 minutes a side, so I watched them closely after that.
Not gonna lie, 1/2 cup flour feels a bit low for 2 zucchini. Mine held together, but I’d try a bit more next time for extra structure.
Yeah I’ve noticed that too—if the zucchini is watery, 1/2 cup flour can be just barely enough. I usually add a few tablespoons until the mix looks thick like a loose batter.
Not my favorite. The texture was a little dense and I wanted more crunch. Maybe I should’ve pressed them thinner?
I followed it and mine came out pale, not golden. I think my skillet temp was too low. Tasted great though. Will retry with higher heat.
