Ingredients
  

  • 8 oz lobster meat cooked and chopped
  • 2 cups elbow macaroni uncooked
  • 2 cups sharp cheddar cheese shredded
  • 1 cup Gruyere cheese grated
  • 2 cups milk warm
  • 4 tbsp butter unsalted
  • 1/4 cup all-purpose flour
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper freshly ground
  • 1/4 tsp paprika
  • 1/2 cup breadcrumbs optional, for topping
  • 2 tbsp parsley fresh, chopped, optional for garnish

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  • In a large saucepan, melt the butter over medium heat. Once melted, add the flour and stir continuously to make a roux. Cook for about 1-2 minutes, until the mixture turns a light golden color.
  • Slowly add the warm milk to the roux, whisking continuously to avoid lumps. Cook the mixture until it thickens and coats the back of a spoon.
  • Remove the saucepan from the heat and stir in the shredded cheddar and grated gruyere cheese. Mix until fully melted and smooth.
  • Season the cheese sauce with salt, black pepper, and paprika. Adjust to taste.
  • Add the cooked macaroni and lobster meat to the cheese sauce and stir until evenly coated.
  • Transfer the macaroni and cheese mixture to a baking dish. Sprinkle the top with breadcrumbs, if using.

    Pretty fancy for mac and cheese. I followed the steps closely (roux first, then warm milk slowly) and it worked great. I’d definitely recommend warming the milk—mine was a little too hot and it thickened fast, but I caught it in time.

      I tried this once and mine got super thick too… I think I let the milk get way hotter than “warm.” Next time I’ll keep it more like warm bath temp. Also lobster sounds amazing 😋
