Croque Madame

October 1, 2024

Croque Madame is the epitome of indulgent French comfort food, offering a decadent twist on the classic Croque Monsieur. This delicious sandwich features layers of savory ham and melted cheese, all enveloped in a rich, creamy béchamel sauce. What sets the Croque Madame apart is the addition of a perfectly fried egg on top, adding a delightful richness that elevates the dish to new heights. Perfect for breakfast, brunch, or a satisfying lunch, this dish is a must-try for anyone who loves French cuisine and hearty meals.

The base of a Croque Madame is a traditional Croque Monsieur, which is made with slices of hearty bread (often white or brioche), ham, and Gruyère or Emmental cheese. The magic happens when the sandwich is smothered in a luxurious béchamel sauce, a creamy white sauce made with butter, flour, milk, and a pinch of nutmeg. This sauce not only adds richness but also helps to bind the sandwich together, making every bite incredibly indulgent.

To take it a step further, the Croque Madame includes a fried egg placed on top. The runny yolk adds a creamy, velvety texture that seeps into the sandwich, making each bite a mix of crispy, creamy, and savory. The contrast between the crunchy, toasted bread and the soft, gooey cheese creates a perfect balance of textures that’s hard to beat.

Making a Croque Madame is surprisingly simple, though the combination of flavors and textures feels fancy and refined. Start by making the béchamel sauce, then layer it on toasted bread with ham and cheese. After baking the sandwich until golden and bubbling, top it with a perfectly fried egg, and you’ve got yourself a meal that’s sure to impress.

Croque Madame is a perfect choice for a luxurious brunch or even a satisfying dinner. It pairs wonderfully with a fresh green salad, providing a light contrast to the richness of the sandwich. Whether you’re in the mood for something indulgent or looking to treat yourself to a bit of French elegance, the Croque Madame is a dish you’ll want to savor again and again.

I tried it but the cheese didn’t melt like it should. Maybe my oven’s off?

    1. User avatar lavern.kilback says:

      4 stars
Maybe try checking the temperature with an oven thermometer? Sometimes they can be off. Love the recipe though!

    2. User avatar cheyenne.rosenbaum41 says:

      3 stars
Cheese melting is tricky. I think you need a more melty cheese like mozzarella, not just gruyere. Just saying.

  2. 3 stars
Honestly, the egg on top is just weird. Why would you put an egg on a sandwich? Doesn’t make sense.

    1. 5 stars
But that’s what makes it a Croque Madame! The egg adds richness. You should try it!

  3. User avatar malcom.hand says:

    3 stars
Not bad, but 400°F for 6-8 min felt short. I needed like 12 min for the bread to crisp. Also I used black pepper from the jar… yeah it’s fine.

  4. User avatar na.schmeler62 says:

    5 stars
Made these for brunch and they were perfect—crispy edges, melty Gruyère, and the runny yolk took it to another level. Will definitely do again.

  5. 2 stars
I’m not sure why people love this so much. Mine tasted a bit bland even with pepper. Could’ve been the cheese, I guess.

  6. User avatar Gustavo Hermiston says:

    5 stars
Yum! Loved it! My kids devoured it in minutes. Will make again for sure!

  7. User avatar jenee.thompson33 says:

    3 stars
Too much butter for my liking. Next time, less butter, pls!

  8. User avatar Spriggan Matron says:

    3 stars
Not gonna lie, I’m skeptical about the mustard amount. It was kinda strong, but if you like Dijon then it’s probably perfect.

  9. User avatar Falmer Spellsword says:

    3 stars
Not bad, but I felt like it was missing something. The mustard flavor was kinda subtle—next time I’ll spread it a bit thicker.

  10. User avatar faustino.heidenreich74 says:

    2 stars
Wasn’t what I expected. Seems too fancy for breakfast. Us country folks just like it simple!

    1. User avatar josh.heaney95 says:

      4 stars
I think it’s a nice twist on breakfast! You might just need to give it a try. 🌟

  11. 4 stars
Tried it for brunch and the runny yolk made it feel fancy. I used Swiss instead of Gruyere and it worked great.

  12. 5 stars
This is such a classic—crispy edges, melty cheese, and that runny yolk makes it. I used leftover roast chicken once and it still worked great.

  13. User avatar alvin.swift says:

    3 stars
I think I burnt my toast in the oven… what a mess! Still tasted okay though haha!

  14. User avatar margaretta.runolfsson says:

    3 stars
I forgot to butter the bread sides (whoops), and it still kinda worked, but not as crispy. Learn from me!

  15. 5 stars
Croque Madame is underrated. The bread-to-cheese ratio was perfect, and the ham stayed juicy. My yolk came out runny like the instructions said. Yum.

    1. User avatar chelsey.kreiger47 says:

      5 stars
Totally agree—croque madame doesn’t get enough love. The runny yolk is the best part though, so nice that yours turned out like the instructions said. 😋

  16. User avatar versie.turner56 says:

    4 stars
Quick and easy recipe! Only took me like 15 mins. Perfect for breakfast!

  17. User avatar Galaxia Woonbeam says:

    2 stars
I used normal deli cheese and it kinda melted, but the flavor was meh. Also 400°F seems high for bread unless you watch it closely.

  18. User avatar sixta.vandervort says:

    5 stars
Made these for brunch—so good. The egg on top really makes it feel fancy, and the Gruyere melts perfectly.

  19. User avatar rogelio.keeling82 says:

    4 stars
Pretty easy overall. I think 6–8 minutes was a bit short for my oven though; I went closer to 10 and the bread got nicer and browner.

  20. User avatar norris.muller2013 says:

    4 stars
Super easy to make! My kids loved it. Definitely making this again Saturday!

    1. User avatar rich.landlord says:

      2 stars
I don’t know man, looks pretty basic to me. How can ya call it a Croque Madame without fancy ingredients? 🤔

    2. User avatar Wallace Carter says:

      5 stars
That’s awesome! I’m glad your kids liked it. What do you plan to pair it with on Saturday?

  21. 4 stars
This looks good but can I use any cheese? Not sure about Gruyere…

  22. User avatar Hubert Spinka says:

    1 star
Egg on top? Yuck! I’ll stick to my plain ham and cheese. 😒

    1. 4 stars
Eggs make everything better! You should give it a try. 😊

  23. User avatar albina.becker says:

    5 stars
This turned out *so* good. The Dijon really makes it taste fancy, and the runny yolk is the whole point. Definitely adding this to my weekend rotation.

  24. User avatar carey.murray87 says:

    1 star
Croque Madame? I thought this was just a fancy name for a breakfast sandwich. Lol.

  25. User avatar myriam.hahn1966 says:

    3 stars
Not gonna lie, 6-8 minutes is confusing. My oven runs hot/cold depending on the day lol. I ended up doing 10 minutes, but it was still tasty—just more toasted.

  26. 5 stars
This recipe is amazing! So easy to follow and turned out delish!

  27. User avatar laverne.kerluke28 says:

    2 stars
Croque Madame? Is that the same as a Croque Monsieur? I’m confused. 🤷‍♂️

    1. 4 stars
I thought they were the same too! 🤔 But the egg is the big diff! More protein and taste!

    2. User avatar oPandariaNo says:

      5 stars
Yes, a Croque Madame is like a Croque Monsieur, but it has a fried egg on top. So good! 🍳

  28. User avatar Tricia McMillan says:

    4 stars
My egg overflowed a little because I forgot to keep the yolk runny 😅 Still delicious though. Next time I’ll watch it closer.

  29. User avatar pamella.marks16 says:

    4 stars
I tried it but my oven runs hot—burned the edges a little. Still tasty though. Next time I’ll watch it closer and maybe add the cheese earlier.

  30. User avatar jacqualine.kshlerin36 says:

    4 stars
I didn’t have Gruyère so I used what I had (edam) and it still melted nicely. Egg on top = elite. Next time I might bake 1-2 minutes longer for more crunch.

  31. User avatar londa.dickens says:

    5 stars
Okay but the instructions are super straightforward. I did everything exactly and it turned out restaurant-level.

    1. User avatar mathWizard says:

      5 stars
Honestly that’s the whole charm—simple steps but great ingredients. I love how quick it is.

  32. User avatar troy.weissnat1972 says:

    5 stars
The mustard step is key. I used Dijon and it gave that classic tang. Definitely would make again!

    1. User avatar Shop Keeper says:

      5 stars
Yes! Dijon really is the move—gives that tang without overpowering the ham/cheese. I always do it exactly like that too.

  33. User avatar Miss Jenise Greenfelder says:

    5 stars
This was delicious! Never thought a simple sandwich could taste so good. I’ll definitely make it again.

  34. User avatar ahmed.lang52 says:

    2 stars
Sounds fancy but isn’t it just a grilled cheese with an egg? Not really impressed.

  35. User avatar shirely.mccullough15 says:

    3 stars
Not bad, but I think 400°F is a little too hot. My bread got dark before the cheese fully melted. Maybe lower the temp next time.

    1. User avatar isabell.volkman says:

      5 stars
I totally get that—oven temps vary a lot. I’ve had better luck with 375°F when the bread browns fast. Maybe cover loosely with foil for the first couple minutes too.

    2. 4 stars
Yeah 400°F cooks the outside quick. If your cheese wasn’t melted, try baking 8-10 min or use thinner bread/cheese slices. Foil helps prevent burning.

  36. 5 stars
Made this for brunch and it was spot on—crispy edges, melty gruyère, and the runny yolk is everything. I used whole wheat bread and still loved it.

  37. User avatar suspiciousCommentator says:

    3 stars
It was okay, but the cheese barely melted. I think I baked it too long!

  38. User avatar ty.blanda27 says:

    2 stars
I don’t get the fuss. For me, it’s basically just a ham-and-cheese with an egg. Why not do it on the stovetop instead of baking?

  39. User avatar aline.feeney2 says:

    4 stars
I followed it pretty much exactly, but I think 6-8 minutes wasn’t enough for my oven. Next time I’ll go a bit longer to toast the bread more.

    1. User avatar suspiciousCommentator says:

      5 stars
Good call—ovens vary a lot. 6-8 min sounds fast; I usually need closer to 10 depending on thickness and how hot my oven really runs. Toast + melty cheese is the real target.

    2. User avatar conception.kozey95 says:

      4 stars
Mine always takes longer too. I’d start checking at like 7 min, then keep going in 2-min increments til the bread is properly browned. That way you don’t dry it out.

  40. 4 stars
Croque Madame is basically grilled cheese with attitude 😄. I’ll make this again, especially for guests.

  41. User avatar Ms. Melvina Schuppe says:

    4 stars
Quick question: can I use cheddar? I tried gruyere once and it’s expensive in my country. I used cheddar today and it melted fine, just a little less fancy.

  42. User avatar jarrod.bogisich says:

    4 stars
Ate this for lunch and it was great! But you gotta use good cheese! I just used whatever I had.

    1. User avatar zack.kuvalis7 says:

      5 stars
I totally agree! Good cheese makes all the difference! I used aged cheddar once and it was amazing!

    2. User avatar stormy.nicolas91 says:

      3 stars
But like, what if your cheese isn’t that great? I dunno, I think it could be tricky… maybe a lower score for that?

  43. User avatar james.stracke97 says:

    4 stars
Pretty tasty, but mine didn’t get as toasted in 6-8 minutes. Maybe my oven runs cool? I added a couple minutes and it fixed it.

  44. User avatar coleman.kilback84 says:

    2 stars
I dunno, I tried it, but it was pretty bland. Maybe I missed something? Will try again and add some spices.

  45. User avatar MAGA2024.Trumpster says:

    5 stars
This is my go-to brunch sandwich. The Dijon + melty Gruyère combo is perfect, and 6–8 minutes in a hot oven really nails the texture.

    1. User avatar Nunu & Willump says:

      5 stars
Yes! The Dijon and Gruyère combo is the whole point. I usually do closer to 8 minutes so the edges get nice and toasty—works every time.

  46. User avatar tera.schuster58 says:

    4 stars
I followed the steps exactly and the cheese didn’t fully melt—maybe my slices were too thick? The egg was runny like you said, so that part was perfect.

    1. 5 stars
Yup, thicker cheese slices can take longer to melt at 400°F. Next time try thinner slices (or shred it) and maybe add 1–2 minutes—just watch the bread so it doesn’t overbrown. Glad the runny yolk part hit though!

  47. User avatar isreal.bashirian says:

    5 stars
Croque Madame is my comfort food. Using Gruyère is key—makes it taste fancy even when I’m lazy.

  48. User avatar norah.vonrueden33 says:

    3 stars
Why Dijon though? I used regular mustard and it still tasted kinda the same (maybe). I’m not a mustard person, but it worked.

  49. User avatar regine.crona says:

    4 stars
I used cheddar instead of Gruyere and it worked, but it wasn’t the same. Still delicious, just less nutty.

  50. 3 stars
I followed the recipe exactly but it came out soggy. Maybe my bread was too fresh? 🤔

    1. 4 stars
I think fresh bread can definitely make it soggy! Maybe try using a day-old bread next time? It helps absorb moisture better. 😊

    2. 2 stars
Soggy? That’s weird. I made this and it turned out fine. Are you sure you followed all the steps? 🤔

  51. User avatar nolan.metz14 says:

    3 stars
Not sure about the “buttered sides out” thing—mine looked wrong at first, but it still turned out tasty. Kinda messy though.

  52. User avatar felisha.kunze1982 says:

    5 stars
This recipe is delicious! I added some spinach for a twist, and it was great. 🙂

  53. 3 stars
Croque Madame? More like Croque “oops.” I forgot to spread the mustard on the unbuttered side, so it was kinda bland until I added extra mustard on top of the egg.

    1. User avatar annemarie.pfannerstill1967 says:

      5 stars
Haha “Croque oops” is so real 😅 Glad you caught the mustard thing—this is exactly why the instructions matter. Extra mustard on top sounds perfect with the runny yolk.

    2. 4 stars
I don’t get how you can forget that—should be like step 3, butter side down, mustard on the other side… but yeah, Dijon on top fixes it. Next time maybe add some mustard to the cheese too? Just sayin.

  54. User avatar rickiestmorty says:

    1 star
Yuck. I didn’t have ham, so I used turkey and it just wasn’t the same. Never again.

    1. User avatar sharri.kohler2002 says:

      4 stars
Turkey just doesn’t cut it for this recipe! Ham is the star. Maybe try it again with ham?

  55. User avatar kathey.larson says:

    2 stars
Eh. The bread came out ok but mine didn’t really get that ‘croque’ crisp. Maybe my butter was too thin?

    1. 4 stars
Yeah, that “croque” crunch is mostly from butter getting right browned. If your butter was too thin or you barely coated the bread, it won’t crisp much—try a thicker, even layer next time and bake a minute or two longer.

    2. 5 stars
I think 6-8 mins is too short for oven temp differences. My first time it was soft too—now I go closer to 10 minutes (and I watch it) and it gets way crisp. Also, make sure your cheese is fully melting/bubbling.

  56. 5 stars
This was amazing! I never thought I could make something so fancy at home. My family loved it!

  57. User avatar mallie.hintz50 says:

    3 stars
I’m confused about step 5—closing the sandwich with the buttered sides out sounds backwards. Still tasted good though, so maybe I didn’t mess it up that badly.

  58. User avatar jeff.morar1965 says:

    5 stars
OMG! So cheesy and gooey! I loved every bite! Best breakfast ever! 🥰

    1. User avatar rob.frami says:

      3 stars
Looks good, but isn’t it just a fancy grilled cheese? Seems a little overrated. 🤔

    2. User avatar Loonquawl says:

      5 stars
I totally agree! Croque Madame is the best breakfast dish out there. So indulgent! 😍

  59. User avatar corinna.daniel95 says:

    4 stars
I don’t get it, it’s just ham and cheese with an egg. Kinda basic? But honestly, I ate two so… yeah it works.

    1. User avatar nathan.kunze says:

      5 stars
Basic? Sure—but that’s kind of the point. The mustard + melty Gruyère + runny yolk combo is what makes it feel “fancy.” Two is a pretty strong endorsement 😄

  60. 3 stars
why egg on top tho?? feels like breakfast meets toast. i guess its ok, but 3 stars.

  61. User avatar ming.carroll72 says:

    3 stars
400°F seems a bit hot? Mine browned fast before the cheese fully melted, so I’d check earlier. Flavor was solid though, especially the mustard.

    1. User avatar cathleen.macejkovic86 says:

      5 stars
Yeah, 400°F can brown stuff quicker than you’d think—I’d start checking around 5 minutes too. Maybe tent with foil if it’s getting too dark before the cheese melts.

    2. User avatar william.johnston10 says:

      4 stars
Mine always needs more time than 6-8 min. 400F is fine but depends on how thick your bread is. If your cheese isn’t melting, crank it down or cover the top? Not sure.

  62. User avatar gregory.strosin1952 says:

    4 stars
Tastes really good, but my oven runs hot. 6-8 min turned into more like 10 before the cheese browned. Still a keeper though.

  63. User avatar edmond.kozey51 says:

    4 stars
1 pinch salt + pepper is generous? I added more and it tasted better. Also the egg timing is tricky—runny means runny!

  64. User avatar Hotblack Desiato says:

    4 stars
I followed it pretty closely but mine took a bit longer than 8 minutes to brown. Still delicious though—nice crispy edges.

  65. User avatar Lu Carter says:

    5 stars
    Yum!

  66. User avatar kate.gislason says:

    3 stars
Why cook the sandwich in an oven instead of pan-frying? I feel like pan would toast it faster… but my sandwich still turned out tasty.

  67. User avatar fredda.gleichner48 says:

    2 stars
Croque Madame sounds fancy but it’s just a glorified grilled cheese with egg? Not impressed.

  68. User avatar Mayor Hagen says:

    5 stars
I made this for brunch and everyone went back for seconds. The egg on top is the whole point—so good!

  69. User avatar jule.streich49 says:

    4 stars
I burnt the first batch, lol. I think my oven runs hot. But when I adjusted, the sandwich was actually restaurant-level.

  70. User avatar lowell.dooley says:

    4 stars
My family loves this! So easy to make, and I can add other fillings too! Maybe some spinach next time?

    1. User avatar liz.prosacco says:

      5 stars
I tried adding spinach too and it turned out amazing! Definitely give it a shot! 🤗

  71. 2 stars
The instruction says 400°F but my brain read 450°F and I almost ruined it. Good thing I checked early—still turned out okay.

  72. 5 stars
Croque Madame is underrated. The Dijon + ham combo is so flavorful. I’m gonna add a little extra pepper next time.

    1. User avatar Pasta Fasta says:

      4 stars
I made something like this, but I think you should bake it longer—6-8 min never fully melts the cheese for me. Maybe my oven runs cold though. Still, Dijon + ham is a great idea.

    2. 5 stars
Yes!! Croque Madame is so much better than people give it credit for. The Dijon really makes the ham and Gruyère sing. Extra pepper sounds perfect 👌

  73. User avatar rashida.jacobson says:

    5 stars
    Five stars!!

  74. User avatar terence.torphy0 says:

    4 stars
Why bake the sandwich AND fry the egg? I tried pan-frying the whole thing and my cheese did not melt right lol. Baking makes more sense.

  75. 5 stars
Delicious! The Dijon + ham + Gruyere combo is so classic. I baked a couple minutes longer because my oven runs cool, but it still came out perfect and melty.

  76. User avatar gisele.robel70 says:

    3 stars
I followed the steps exactly, but the sandwich didn’t get as crispy as I expected. Maybe I should’ve used thicker bread or more butter?

  77. User avatar luigi.mante12 says:

    5 stars
Made this for brunch and wow—perfect melty center. The runny yolk on top is the whole magic. Would definitely do again.

  78. User avatar brant.gaylord34 says:

    2 stars
1 teaspoon mustard seems like a lot—mine was overpowering. Maybe I’d use less next time.

  79. User avatar Peregrin Took says:

    3 stars
My yolk broke when I moved it—sad moment. Flavor was still great, but presentation matters for this one.

  80. User avatar erick.strosin1959 says:

    5 stars
So good! I used regular cheddar instead of Gruyère and it still worked. The yolk on top makes it feel fancy without much effort.
