A refreshing and tangy South Indian rice dish flavored with lemon and spices.

Ingredients
  

  • 2 cups cooked rice
  • 2 tbsp lemon juice
  • 1/4 cup peanuts
  • 1/4 cup cashews
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal split black gram
  • 1 tsp chana dal split Bengal gram
  • 1 tsp turmeric powder
  • 8-10 curry leaves
  • 2 green chilies slit
  • salt to taste
  • coriander leaves for garnish

Instructions
 

  • Heat oil in a pan over medium heat.
  • Add mustard seeds and let them splutter.
  • Add urad dal and chana dal and sauté until golden brown.
  • Add peanuts and cashews and fry until golden brown.
  • Add curry leaves and green chilies and sauté for a minute.
  • Add turmeric powder and mix well.
  • Add cooked rice and mix gently to combine all the ingredients.
  • Add lemon juice and salt, and mix well.
  • Garnish with fresh coriander leaves and serve hot.
