Ingredients
  

  • 2 cups cooked rice
  • 1 cup chopped tomatoes
  • 1 cucumber peeled and diced
  • 1 red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1/4 cup Kalamata olives pitted and halved
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large mixing bowl, combine the cooked rice, chopped tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, and halved Kalamata olives.
