Ingredients
  

  • 2 cups cooked rice
  • 1 cup chopped tomatoes
  • 1 cucumber peeled and diced
  • 1 red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1/4 cup Kalamata olives pitted and halved
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large mixing bowl, combine the cooked rice, chopped tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, and halved Kalamata olives.
  • In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper.
  • Pour the dressing over the rice mixture and toss to coat everything evenly.
  • Transfer the mixture to a baking dish and spread it out in an even layer.
  • Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and crispy.
  • Remove from the oven and let it cool for a few minutes before serving.
  • Garnish with fresh herbs, if desired, and enjoy!
