Fattoush salad is a colorful, tangy, and refreshing dish that comes from the Levant region, particularly popular in Lebanon and Syria. It is a type of bread salad, similar in concept to Italy’s panzanella, but with bold Middle Eastern flavors. The base is made from fresh vegetables like lettuce, tomatoes, cucumbers, radishes, and green onions, all chopped into bite-sized pieces. The unique element that sets fattoush apart is the addition of crispy fried or toasted pieces of pita bread, which soak up the dressing while keeping some crunch.
The dressing is what truly defines this salad. It typically features olive oil, lemon juice, and a generous sprinkle of sumac, a deep red spice that adds a tangy, slightly citrusy note. Some versions also include garlic, pomegranate molasses, or fresh herbs like parsley and mint for extra freshness. The combination of zesty dressing, crunchy bread, and juicy vegetables makes every bite bright and satisfying.
Fattoush is often served as part of a mezze spread, alongside dishes like hummus, baba ghanoush, and tabbouleh. It works beautifully as a side for grilled meats or fish, but it is also hearty enough to enjoy on its own as a light lunch. The mix of textures and flavors keeps it interesting from the first bite to the last.
One of the nice things about fattoush is its adaptability. While there are traditional ingredients, it is common for home cooks to use whatever seasonal vegetables they have on hand. This makes it not only a flavorful choice but also a practical one, reducing food waste by turning leftover bread and produce into something vibrant and delicious.
Beyond taste, fattoush brings a sense of comfort and community. In many Middle Eastern households, it is a regular feature on the table, especially during gatherings and Ramadan iftar meals. It is simple to prepare yet feels special, a dish that celebrates freshness, texture, and balance.
With its crisp vegetables, fragrant herbs, and that addictive crunch from the pita, fattoush salad is a true celebration of Mediterranean flavors. It is proof that healthy food can be full of character, satisfying, and anything but boring.

Tried this for the first time, didn’t have lemon juice so used vinegar! Still turned out okay!
Hmm, not sure about the pita. I thought Fattoush was supposed to have fried bread, not baked!
Pretty good, but I wanted more crunch. Might add nuts next time.
I agree! Adding nuts sounds like a great idea for some extra texture!
Nuts? I thought fattoush is just salad… not tryin to ruin tradition here.
This salad is soooo refreshing! I love the crispy pita and mint flavor. 5 stars!
Saw this recipe on TikTok, tried it, and wow, I’m impressed! 😍
YUM!!! Will totally make again!! 😍
Made this yesterday but forgot the sumac, didn’t know it was or where to find it. Still yummy though!
I think it needs more seasoning. It was a bit bland for my taste. Maybe try adding some garlic?
Easiest salad I’ve ever made! Thanks for sharing. 🌿
I don’t like parsley at all, ruined the salad for me. Wouldn’t make again. 1 star!
I make this every week. Quick and delicious!
Why do people like salads? They ain’t filling enough. I’d rather have a burger.
OMG, my family loved it! I added some feta cheese too! Perfect! 😍
Salad is salad right? Just NOT like this, too much stuff.
My friend said it’s unhealthy because of the olive oil. But I think it’s all good fats, right?
This salad is so fresh and yummy! The mint adds a nice touch.
Love it! A perfect summer dish. Will definitely be making this again.
I don’t know, sumac? My salad never needs no special spices. Just veggies is good!
I totally agree! Fattoush is the best salad for summer. So fresh and tasty!
This salad is a game changer! So fresh and tasty! 💚
Totally agree! This salad is a must-try! 🥗💚
Just tried making this but forgot the mint. Not the same without it! Lesson learned, lol!
Super easy to make! I didn’t have sumac so I just omitted it.
Had to gag this down, it was just TOO HERBY.
Fattoush? Isn’t that the name of a place? Anyway, it was good.
Actually, Fattoush is a salad, not a place! But glad you liked it!
This recipe is not authentic!!! Fattoush should have radishes and roasted veggies too!!!
YUM! Loved it! So colorful and perfect for summer BBQs! 🌞⭐️⭐️⭐️⭐️⭐️
I totally agree! It’s such a light and refreshing dish. Perfect for hot days! 🍅💚
Looks good, but I’m not sure about those mint leaves 🤔. Can you taste them that much? I usually skip ’em.
I’m not sure about the sumac. Does it really make that much difference?
Sounds complicated, but I gave it a shot. Not bad! Gonna search for better dressing next time.
Simple and refreshing! I added some feta cheese, it was a great touch. Thanks for the recipe!
I think the sumac is too strong. Maybe reduce it next time? 🤔
Not sure about the sumac… What’s it even taste like? I used regular spices instead, wasn’t great. ⭐⭐
Not a fan. My kids didn’t like it at all. I won’t make it again.
Too many ingredients for a salad if ya ask me. Just throwin’ stuff together doesn’t make it fancy! 👎🏻
Pita bread turns soggy too fast in the salad. Better to serve on the side maybe?
Quick and easy! My kids didn’t help at all but they ate it! Happy with that! ⭐⭐⭐⭐⭐
Fattoush salad? More like ‘fat-a-nope’! Didn’t like it at all. Too many veggies!
I think you’re missing out! Fattoush is all about fresh flavors. You can always tweak the veggies to your liking.
I don’t understand the sumac. It’s hard to find where I live and kinda expensive! Could I use lemon zest instead? 🤔
I think lettuce is overrated. Just give me the toppings without it! 😂
This salad is so fresh and tasty! Made it for a picnic and everyone loved it! ⭐⭐⭐⭐⭐
Anyone else think this salad doesn’t taste like anything special? Just a bunch of veggies.
Quick and easy! Wish I had more than one bowl for this salad. Yum!
I totally agree! This salad is so refreshing and a great way to use up leftover pita! 🍅🥗
One bowl would be enough if u eat fast! But yeah, I want more too, haha!
I replaced the pita with some tortilla chips to make it crunchier! 😄 It was awesome! ⭐⭐⭐⭐
Sounds like a fun twist! I might try that next time! 😋
Tortilla chips? Really? That’s not Fattoush anymore, just a salad with chips. 🙄
This salad is SO fresh and delicious! I love the crunch from the pita. Definitely making it again!
This recipe is a bit off. I thought fattoush had garlic in it? 🤔
Wow, who knew salad could taste this good! 5 stars for sure!
Too many ingredients for my liking, I prefer it simple. Just lettuce and tomato!
Isn’t fattoush supposed to have pomegranate seeds? Just saying! 🤔
