Ingredients
  

  • 1 cup chickpeas canned, drained and rinsed
  • 1/2 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup cherry tomatoes halved
  • 2 tablespoons tzatziki sauce store-bought or homemade
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon olive oil extra virgin
  • to taste salt
  • to taste black pepper freshly ground

Instructions
 

  • In a large mixing bowl, combine the chickpeas, cucumber, red onion, and cherry tomatoes.
  • Add the tzatziki sauce, fresh dill, lemon juice, and olive oil to the bowl.
  • Gently toss all ingredients together until well combined.
  • Season with salt and black pepper to taste.
  • Serve immediately or refrigerate for 15-30 minutes to allow flavors to blend.

    Not bad. My tomatoes were kind of small so I used more. I didn’t have fresh dill so I used dried and it was meh. If you have fresh herbs, don’t skip them.

      I get what you mean—chickpeas are kind of neutral, so if the tomatoes are extra sour it throws the whole balance off. I’ve had better luck adding a tiny pinch of sugar or using less lemon juice and more olive oil. Also letting it sit 30+ min in the fridge helps it mellow.

      Nah I think it’s supposed to be tangy. The lemon and tomatoes are the point. If you don’t like sour stuff just add more tzatziki or cucumber. Chickpea salad is always “meh” unless you make it spicy lol.

      I totally get where you’re coming from—garlic makes everything better 😅 The tzatziki often already has garlic though, so maybe it’s baked into that. If yours is plain, a little minced garlic (or garlic powder) would definitely “round it out.”

    I’m skeptical about just dumping store-bought tzatziki in and calling it Greek… but honestly it worked. Still, I might add feta next time for more punch.
