Cooked rice is stirred in toward the end to soak up the delicious broth and add substance.
One of the best things about Stuffed Pepper Soup is how customizable it is. You can use ground beef, turkey, or even a plant-based alternative. Choose white, brown, or cauliflower rice depending on your preference. Add a dash of crushed red pepper flakes if you like heat, or a handful of cheese for extra richness.
The soup tastes even better the next day, making it a fantastic choice for leftovers. Serve it with crusty bread or a simple salad for a complete, cozy meal.

Yum!!! Perfect for chilly evenings! Just add some crackers and you’re set.
Beef in soup? That’s weird. Who puts beef in soup? Give me noodle soup any day.
This soup is amazing!! I made it for my family and everyone loved it. Definitely a keeper!
Made this soup but forgot the garlic! Still tasted good, but next time I’m adding it for sure.
Not a fan. The texture was off and tasted kinda bland. I won’t be making this again.
I dunno, maybe you did something wrong? It sounds pretty good to me. I think it’s all about personal taste!
I totally disagree! This soup was amazing! The flavors were spot on. You should try adding more spices next time!
This receipt is easy to follows but don’t taste like stuffed peppers at all. Disapointing.
I tried it and thought it tasted great! Maybe you needed more seasoning? Don’t give up on it just yet!
Just one word: yum!
Uh, I don’t know. Soup with rice sounds weird to me. Isn’t that too much?
Right? I made this last week and my family couldn’t get enough!
Tasted a bit bland, maybe add more spices? I was expecting more flavor.
I thought it had plenty of flavor! Maybe try simmering it a bit longer next time.
Yeah, I agree. More spices would definitely help! I usually add cayenne for a kick.
It took way too long!! I don’t got 30 mins to wait for soup. I prefer my meals fast.
Meh. Didn’t have ground beef, used tofu. Wasn’t right 🙁
Seems like a lot of work for soup. But who knows, maybe it’ll be worth it? 🤔
Ain’t nobody got time for that! Just buy a can of soup, save yourself the trouble. 😒
Honestly, I thought the same! But it turned out to be super tasty! Worth the effort! 🍲
Yummy!! 10/10 would recommend to other soup lovers.
I made this soup yesterday and my family loved it too! It’s very filling, definitely a winner.
This soup is amazing! Tastes just like my grandma used to make. Five stars!
I didn’t really like this. The beef didn’t blend well with the peppers. Wouldn’t make it again.
This soup is amazing! Super easy to make and so tasty. My kids loved it!
Hmmm, seems like a lotta work for a soup. But it looked pretty. Idk if I’ll try it though.
I tried this recipe but it turned out too salty for my taste. Might cut down on the broth next time.
Simple and easy to make. My kids loved it! Plus, it filled them up.
I’m glad your kids liked it! This soup is super easy and a great way to sneak in some veggies.
Pretty good! I thought the instructions were kinda vague tho.
Yummy! I added some cheese on top and it was delish! 😍
I followed the recipe but I used ground turkey because that’s what I had. Is it still stuffed pepper soup if I do that? LOL.
Of course, it’s still soup! Ground turkey is a great swap. Just makes it a bit healthier, right? 😂
I bet this is good for winter… but I’m not a soup person, ya know.
Good for the soul! Absloutely hearty and something I’d make when it’s cold out! Love the colors too.
This soup is amazing! So comforting and full of flavor.
Who knew soup could be so good? My husband gobbled it up! Will make again!
Not bad, but felt a bit bland. Next time, I’ll add some chili powder.
Easy recipe but I forgot to buy parsley. Looks sad without it 😔
You can always add some other herbs or spices to make it look better! Basil might work too! 😊
Too much tomato for my taste. I mean, it’s soup, not a tomato sauce :).
This soup is amazing! Tastes just like stuffed peppers but so much easier. My kids loved it!
I thought this was boring. Guess I expected more flavor. Maybe add some cheese next time?
It was ok, but I feel like it needed something more. Maybe add some cheese on top next time?
I didn’t have chicken broth so I used beef broth instead, still tasted good! Quick and easy to make.
Not impressed. The flavor just wasn’t there. I won’t be making this again.
So easy to make! I just threw everything in a pot and it was delicious—what more could you want?
I didn’t have rice, so I used pasta instead. It still tasted good!
Used ground chicken instead of beef, still yum! The rice made it so hearty.
My mom makes a similar dish, but with no beef, just peppers. This was ok I guess.
It’s interesting how everyone has their own version! I bet your mom’s recipe is delicious too. This soup sounds hearty with the beef though!
Sounds kinda bland to me… Where’s the spice? Just eating peppers ain’t enough!
I didn’t have any chicken broth, used beef broth instead. Wasn’t sure if that would work, but it did! Pretty good.
Stuffed pepper soup is so good!! I added some corn for extra sweetness. Yummy!
Corn sounds like a great idea! I never thought of adding that. Can’t wait to try it like this!
Not the best, not the worst. I’ve had better soups. It’ll do for dinner, I guess.
I think it’s actually pretty good! It has nice flavors and is filling. Maybe you need to season it more? Just a thought!
My kids devoured this! I skipped the parsley but it was still yummy. Will make again.
I don’t even like peppers but surprisingly liked this! Crazy!
I was really skeptical about mixing rice in soup but it turned out great! Who knew?
Rice in soup? Kinda weird, right? I might stick to just eatin’ the rice separate. But hey, if it works for ya!
I’m so glad you enjoyed it! Mixing rice in soup is a game changer. I agree, who knew it could be so good?
Yummy! I added some extra spices and it turned out perfect. Will definitely make again!
Whole family loved it! I added some corn for sweetness – delish! 🌽
This soup is sooo good! My family loved it! Definitely a 5-star recipe.
I totally agree! This soup really hits the spot, especially on a chilly day. It’s a family favorite now!
I was skeptical at first, but it turned out great! Will definitely make it again.
I wasn’t too sure about the combination of rice and beef in a soup. But wow, this actually works! I’m impressed.
Beef in soup? Sounds weird! But I guess if you liked it, who am I to judge? 🤷♂️
I never thought rice could be in soup either! Glad it turned out good for you! 😊
Wow, this really hit the spot! So filling and delicious, we had seconds!
I’m so glad you enjoyed it! It’s one of my favorites too. 😊
Too much tomato for my taste, it overpowered everything else. Not impressed.
I made this dish for my friends and they all asked for the recipe. Super tasty!
That sounds delicious! I’ll try making it for my family this weekend!
Followed the recipe but it was kinda bland. Maybe more spices next time?
I absolutely loved this soup! The flavors were amazing, and it was super easy to make. Will definitely be adding it to my recipe book!
I tried this but it turned out too watery. Maybe I added too much broth? Not sure what went wrong.
are we sure this is healthy? I mean, ground beef is usually fatty and why so much rice??
One pot meals are the best! Less cleanup and more time to relax. 🙌
Easy recipe, but my kids said it was too spicy. I didn’t use spicy stuff! Just bell peppers for goodness sake! 🤷
Great way to use up old peppers! Turned out nice and hearty. 👍
This soup is amazing!! My family loved it, especially the kiddos!
Not what I expected. It tasted kinda bland, I might add more spices next time.
Soup? Pfft, more like a casserole! There’s way too much stuff in here.
Too much stuff? That’s how soup should be! The more, the merrier, I say!
I think it’s a great way to pack flavors, not a casserole at all! I love stuffed peppers! ❤️
Delicious and filling! Used ground turkey instead and it was still YUM!
I made this with my kids and it was a fun time! Messy but worth it.
I dunno if I did something wrong, but mine came out really bland. Might need more seasoning.
It was okay. I felt like it needed something more. Maybe some spice or just a bit more salt? Not sure.
I totally get what you’re saying! A little heat can really elevate this dish. Maybe try adding some red pepper flakes next time?
2 thumbs down! I thought the beef made it taste weird with the tomatoes. Never again!
What’s the point of making soup when it’s just like chili? Idk, just seems pointless.
Pretty good, but I think it needs more spices. Maybe try cumin or paprika?
Didn’t have ground beef, so I used turkey. Still delicious! 😋
Turkey sounds like a great substitute! I might try that next time. Thanks for sharing! 👍
This is just a fancy way to make chili. Not impressed. Next time, I’ll just make the chili.
Wow, this soup is amazing! Tastes just like stuffed peppers, but way easier. Will definitely make again! 😋
I tried this recipe yesterday and it was really good! My kids loved it too. Can’t wait to make it again!
I dunno, it just taste like warm tomato water 🙁
I don’t like rice in soup, so I skipped that part. Actually came out great without it!
That’s cool! I didn’t think about skipping the rice. Might try it that way too! 😊
