Ingredients
  

  • 2 chicken breasts diced
  • 1 tbsp olive oil
  • onion small, diced
  • 2 cloves garlic minced
  • 2 cups spinach fresh
  • 4 eggs
  • Salt and pepper to taste

Instructions
 

  • In a large skillet, heat the oil over medium heat.
  • Add the onion and garlic and cook until softened.
  • Add the diced chicken and cook until browned and cooked through.
  • Add the spinach and cook until wilted.
  • Make four wells in the skillet and crack an egg into each well.
  • Cover the skillet and cook until the eggs are cooked to your liking.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!
