Peach Pie

August 5, 2025

There’s something undeniably comforting about a freshly baked peach pie. With its golden, flaky crust and sweet, juicy peach filling, it’s the epitome of summer dessert bliss. Whether you’re using fresh, ripe peaches or frozen ones, this pie is a celebration of seasonal fruit at its best.

The key to an incredible peach pie starts with the filling. Fresh peaches are peeled and sliced, then tossed with sugar, a dash of cinnamon, a squeeze of lemon juice, and a bit of cornstarch to help thicken the juices as the pie bakes. The combination of cinnamon and lemon brings out the natural sweetness of the peaches, making each bite feel like a little burst of sunshine. If you like, you can add a pinch of nutmeg or ginger for extra depth of flavor, but the peaches alone are usually the star of the show.

Next, you’ll need a buttery, flaky pie crust. You can make your own from scratch or use store-bought, but either way, the crust should be tender enough to crumble with each bite but sturdy enough to hold in all that delicious peach filling. Roll out your dough and line a pie dish, then pile in the peach mixture. Top with another layer of dough, crimp the edges, and cut a few slits in the top to allow steam to escape during baking.

Baking the pie at a high temperature ensures that the crust gets golden and crisp while the peach filling becomes perfectly bubbly. Once the pie is out of the oven, let it cool slightly so the filling can set, making it easier to slice.

Serve your peach pie warm or at room temperature, with a scoop of vanilla ice cream or a dollop of whipped cream for the ultimate treat. It’s perfect for summer barbecues, family dinners, or any occasion when you want to bring a little homemade sweetness to the table. Every slice is a reminder of why peach pie is a timeless classic.

Too many steps for a pie! Can’t we just buy one? 😒

Why lemon juice? I didn’t have it and it came out fine without.

My crust was burnt and the filling was too soupy. Not impressed.

I totally get that! It’s so frustrating when the pie doesn’t turn out as expected. Maybe try covering the edges with foil next time to prevent burning?

    2. User avatar antonia.okeefe60 says:

Burnt crust? You must’ve left it in too long. But soupy filling? That sounds like the flour didn’t thicken it or too much juice got in. Sad to hear it didn’t work! 🙁

Had to make some adjustments, didn’t have enough peaches. Still turned out ok.

  7. 3 stars
It’s okay. I ended up burning the crust. Shouldn’t have trusted the oven timer.

Really? I found it a bit too sweet for my taste. Maybe I used too much sugar? 🤔

I don’t understand why you would put lemon juice in a pie? Isn’t that for fish?

    1. User avatar guadalupe.gutkowski says:

      5 stars
Lemon juice helps balance the sweetness of the peaches! It’s not just for fish. Trust me, it makes the pie taste fresher!

I don’t get why everyone is raving about this. The crust burnt a bit and the filling was too mushy. Maybe I did something wrong?

  18. 1 star
Peach pie? More like peach flop! I followed the recipe exactly and it turned out all runny. Very disappointing.

    1. 4 stars
I’m sorry to hear that! It can be tricky with pies sometimes, especially if the peaches were too juicy. Did you maybe use a different kind of peach?

  19. 3 stars

    1. User avatar lionel.jerde65 says:

I kinda agree, but a little sugar is what makes it tasty! Maybe just don’t eat the whole pie at once? 😅

    1. User avatar nancee.streich says:

      2 stars
Maybe u put too much sugar? I dunno, but mushy sounds bad.

    2. User avatar I. P. Freely says:

      4 stars
Don’t worry! Mushy pie can happen if the peaches were overly ripe. Try using firmer ones next time. Good luck!
