Carrot Ribbon Salad

April 14, 2025

Carrot ribbon salad is a vibrant and refreshing dish that highlights the natural sweetness of fresh carrots. This simple yet elegant salad is not only visually appealing but also packed with nutrients, making it the perfect addition to any meal. The delicate, thin ribbons of carrot create a beautiful texture that’s both light and satisfying.

The key to this salad lies in how the carrots are prepared. By using a vegetable peeler, you can create long, thin ribbons that have a soft, almost silky texture. These ribbons are not only visually stunning but also provide a delightful crunch with each bite. The sweetness of the carrots is perfectly balanced with a light, tangy dressing, which elevates the overall flavor without overpowering the natural taste of the vegetables.

For the dressing, a simple combination of olive oil, lemon juice, honey, and a pinch of salt and pepper works wonders. The lemon juice adds a zesty brightness, while the honey gives a subtle sweetness that complements the carrots. A drizzle of extra virgin olive oil ties everything together with its rich and smooth texture. You can also experiment by adding fresh herbs like parsley, mint, or cilantro for added freshness and depth.

To enhance the salad further, consider adding a few additional ingredients. A sprinkle of toasted seeds or nuts, such as sunflower seeds or walnuts, adds a satisfying crunch and an extra layer of flavor. Feta cheese or goat cheese crumbles can be added for creaminess and a salty contrast. For a slightly spicy kick, you could toss in a pinch of red pepper flakes or chili powder.

Carrot ribbon salad is a perfect side dish for any meal, whether it’s served alongside grilled meats, roasted vegetables, or a light pasta. Its fresh and vibrant flavors make it an ideal choice for warm-weather gatherings, potlucks, or as a light lunch on its own.

Sounds good but I’ve never been a fan of raw carrots. Maybe I’ll try it with cooked ones?

I agree! The dressing really makes it pop. Glad to hear you loved it!

Honestly, I did the peeler part and it turned into short ribbons and I was like… meh. Still ate it tho. Very bland for me.

Wasn’t sure about the honey in it, but it actually works! My kids loved it.

  4. User avatar sharen.jaskolski says:

Carrots in ribbons? Seriously? Just chop ’em up. What’s with the fancy stuff?

    1. 4 stars
I totally get your point! Sometimes simple is just better. Why complicate things?

    2. User avatar anibal.connelly2021 says:

      5 stars
Nah man, ribbon carrots look cool! It’s about making food fun, ya know? Just try it!

  5. User avatar elenor.pfeffer2017 says:

This salad is so refreshing! The lemon juice really shines. Will definitely make again!

  6. 2 stars
Eh, not my favorite. I think the honey is too much or something. Just tastes weird.

    1. User avatar tissues_with_issues says:

      4 stars
I think the honey adds a nice sweetness to balance the carrots, but taste is subjective! Have you tried less honey?

  7. 4 stars
My peeler kept tearing the carrots, so I ended up with short ribbons. Still ate it though—sweet and tangy, kind of reminds me of a fancy salad from a restaurant.

  8. 5 stars
This was so simple and refreshing! My kids loved it! 🥕💚

    1. User avatar reinaldo.powlowski4 says:

      5 stars
I’m glad your kids enjoyed it! This salad is so easy to make! 🥕✨

    2. User avatar francis.schuppe43 says:

      2 stars
Really? Just carrots? Sounds kinda boring honestly… 😕

  9. User avatar Gabriella says:

    4 stars
Good recipe! But I added some nuts for crunch, much better that way. 😋

    1. User avatar rich.landlord says:

      5 stars
Nuts are a great idea! They give an extra crunch and flavor. I’ll try that next time! 👍

    2. 3 stars
I don’t know about adding nuts, seems like it might overpower the carrots. But if you like it, that’s cool.

  10. User avatar del.ortiz says:

    3 stars
Carrots are good for you.! But uhm, what do you do if you don’t have a peeler? Can I just chop them?

    1. User avatar barbera.rice says:

      4 stars
Chopping them is fine but you won’t get that nice ribbon effect! Just slice them thinly if you can.

  11. User avatar jewell.goodwin says:

    3 stars
Not gonna lie, I expected it to be more exciting. It’s tasty, but it’s basically carrots with a citrus glaze. Still, easy and quick.

  12. User avatar liberal.hero says:

    3 stars
Why you gotta peel the carrots? Seems like extra work for nothing. Just chop ’em, right?

  13. User avatar rhoda.kassulke21 says:

    3 stars
Honestly, it tastes like healthy lemony carrots. Not bad, just not exciting? 😅

  14. User avatar chris.marvin8 says:

    3 stars
My veggie peeler kept jamming lol. I still ate it though—flavor was decent. Might try shredding instead if I can’t get ribbons.

  15. 2 stars
uhh… not my thing. Carrots are fine but this is too fancy for a salad.

  16. User avatar alfred.russel26 says:

    5 stars
Quick and easy! Just what i needed for lunch today!

  17. 4 stars
I tried this with my kids and they thought i was playing with their food. But they actually liked it! Surprised me 🙂

    1. 5 stars
That’s awesome! Kids can be so picky, but this salad sounds fun. 🥕🙌

    2. 2 stars
I dunno, my kids would never eat carrots like that. Maybe add some ranch next time?

  18. User avatar elliot.crona22 says:

    2 stars
This is a nice snack salad, but 1 tablespoon honey seems like a lot to me. Next time I’ll cut it in half and see.

  19. User avatar pasquale.bartell says:

    5 stars
I love the tanginess of the lemon! So refreshing after a long day!

    1. User avatar ShanksOnePiece says:

      5 stars
Totally agree! The lemon really does add that zing! 🍋

    2. User avatar mary.glover1969 says:

      2 stars
I tried this but found it too sour for my taste. Maybe less lemon next time?

  20. User avatar mac.mcglynn says:

    5 stars
Super easy to make and so colorful! My kids loved it!

  21. User avatar quentin.medhurst78 says:

    2 stars
This is basically a diet food, right? 🤔

  22. User avatar Peregrin Took says:

    1 star
Carrots are supposed to be cooked, right? This just felt wrong. 1 star.

  23. User avatar leland.schinner90 says:

    4 stars
Simple but actually classy. I added a handful of chopped parsley and it made it feel restaurant-y.

  24. User avatar leigh.stanton15 says:

    2 stars
Honestly, didn’t care for it. The honey was weird with the carrots. 🤷‍♂️

    1. User avatar yoshie.willms says:

      3 stars
I don’t get it, honey is great with everything! Maybe you just didn’t mix it well? 🤔

    2. User avatar alexander.koss2005 says:

      5 stars
I actually loved it! The honey adds a nice sweetness that balances the carrots. 🤩

  25. 3 stars
I tried it and the carrots got a little watery after sitting. Next time I’ll serve right away.

    1. 3 stars
Interesting. I think refrigerating for an hour might be too long for carrots like that… I’d try adding the lemon/honey dressing just before eating. Also, are they supposed to be boiled or raw? I always get confused with these ribbon salads 😅

    2. User avatar Emily Saunders says:

      5 stars
Ooh yeah, I’ve noticed raw carrot ribbons can weep a bit once they sit. Serving right away is the move—maybe pat them dry too before tossing?

  26. 2 stars
Too much lemon for my taste. I like my salads less tangy.

  27. User avatar Mrs. Alfred Dooley says:

    1 star
Carrots? Really? Who even eats this? Can’t believe people like this.

  28. User avatar Tari Stokes says:

    5 stars
This salad is soooo refreshing! I love how easy it is to make. My kids ate it up! 😊

  29. User avatar leena.hansen12 says:

    5 stars
Yesss, best salad for when you don’t want to cook. My kid actually asked for seconds (and she hates vegetables).

  30. User avatar Magrathean sperm whale says:

    4 stars
Not gonna lie, I expected it to be blander. But the dressing does the work. Still, I’d add maybe some herbs next time.

  31. User avatar CTRLplusW says:

    5 stars
I added a little orange zest and it popped. Would totally make again for a quick side.

    1. User avatar jaye.rowe says:

      5 stars
That sounds amazing—orange zest with carrot is such a good combo. I’m stealing this idea for sure.

  32. User avatar thanh.kuhlman says:

    5 stars
Made this last night, and it was a hit at the dinner table. Will make again for sure!

  33. User avatar Bud Nikolaus says:

    5 stars
This is such a fresh little salad—those ribbons look fancy but it’s super easy. The lemon + honey combo is perfect. I added a sprinkle of feta and it was amazing.

    1. User avatar jacki.connelly29 says:

      3 stars
Not gonna lie, I’m skeptical about raw carrot ribbons getting enough flavor in just an hour. Does it really hold up if you prep it earlier? Also my honey kind of clumped with the lemon—maybe I should warm it?

    2. 5 stars
I tried this and OMG the lemon + honey is such a good balance. The ribbons were actually really easy to make—mine looked a little less “perfect,” but it still tasted great. Added feta too and I’m converted.

  34. 3 stars
Salad was ok I guess, but my mom makes way better stuff. This is like rabbit food.

  35. User avatar Ignacio O'Reilly says:

    3 stars
Carrot salad? Sounds weird. Did you invent this?

  36. User avatar bertram.schowalter says:

    3 stars
Pretty good, but I think next time I’ll use less honey. Mine ended up a little too sweet for my taste, even with the lemon.

  37. User avatar armandina.schoen69 says:

    4 stars
Very easy. Like, easier than my cooking skills usually allow 😅 The carrots stayed crunchy, which I appreciated.

    1. User avatar Pasta Fasta says:

      5 stars
Love that the carrots stayed crunchy! 😄 I always worry they’ll get soggy, so good to know this works. Definitely trying it soon.

  38. User avatar jayna.stracke94 says:

    5 stars
This salad is super refreshing! Love the carrot ribbons, such a cute idea!

  39. User avatar carri.altenwerth71 says:

    3 stars
My grandma used to make something like this but with celery and jello! 😂 Anyone else? 🤔

  40. User avatar oliver.thiel86 says:

    4 stars
Not gonna lie, I forgot to refrigerate for an hour and it tasted fine anyway. Also my pepper was definitely expired… still edible, but I think it could be better.

  41. User avatar vance.kerluke says:

    1 star
    nop!! not for me…

    1. User avatar Oscar Gleichner II says:

      3 stars
Why not? It’s just carrots. You could leave out the honey if you want. Just give it a try!

    2. User avatar emerson.bergnaum9 says:

      4 stars
I think it’s really refreshing! Carrots are good for you, you know?

  42. User avatar Jessica Atreides says:

    4 stars
Super simple, but I found I needed a touch more salt. Otherwise it was really nice and not too sweet.

    1. 2 stars
Really? I made this and it was way too salty—maybe I used table salt instead of kosher? Next time I’ll just do less honey too.

    2. User avatar joe_banana says:

      5 stars
Totally agree—carrots can vary a lot in sweetness, so “to taste” salt makes sense. I usually add a pinch at the end too.

  43. User avatar emerson.prohaska47 says:

    4 stars
My peeler kept tearing the carrots 😅 but even with uneven ribbons it was still tasty. Crunchy and bright!

  44. 4 stars
I’m skeptical of honey in savory stuff, but I gave it a shot. Turns out it balances the lemon nicely. I’ll keep it in my rotation.

    1. User avatar hubert.wisozk1964 says:

      5 stars
Yeah! Honey + lemon is such a good combo—never thought it’d work with carrots, but it does. I also like a tiny pinch of chili flakes with it.

    2. 3 stars
I’m still not convinced, honey feels kinda sweet to me… but if you say it balances, maybe I’ll try less (like 1/2 tsp) next time. Still sounds good though.

  45. User avatar yetta.hickle40 says:

    3 stars
Wait, refrigerate it only an hour? I kept mine overnight and it got kinda watery… so follow that step, lol.

  46. User avatar veronica.smith says:

    5 stars
This is such a light, refreshing salad—those carrot ribbons look gorgeous. The lemon-honey combo is perfect and not too sweet.

  47. User avatar rickey.carter64 says:

    5 stars
Wow. So easy and actually bright. I added toasted nuts and it was amazing. I keep coming back to this recipe.

  48. User avatar melissa.pacocha says:

    5 stars
Simply delicious! Perfect side dish for summer barbecues. 🌞

  49. User avatar rosamond.okon91 says:

    2 stars
I didn’t like it. Too much lemon for my taste. Maybe I did something wrong?

  50. User avatar teodoro.oreilly77 says:

    3 stars
I mixed the dressing wrong and it didn’t taste great, but I still liked the carrots. 😅

  51. User avatar Bowerick Wowbagger says:

    4 stars
I did this for lunch and it felt kinda fancy for no effort. I’d maybe add some shaved Parmesan next time, but as written it’s great.

  52. User avatar mimi.gleichner9 says:

    2 stars
Not a fan. The honey was too sweet for me and I didn’t like the texture of the ribbons.

  53. User avatar leonarda.gleason2014 says:

    3 stars
I dunno about this. Who would eat raw carrots like this?

    1. User avatar Peregrin Took says:

      5 stars
I love raw carrots! This salad sounds refreshing. Give it a try, you might be surprised!

  54. 2 stars
I’m not sure about the honey—carrots already taste sweet to me. Maybe less honey next time?

  55. User avatar adaline.gerhold says:

    5 stars
Love how light and fresh this looks—carrot ribbons are such a fun twist. The lemon-honey combo sounds perfect. Definitely trying it for lunch!

  56. User avatar latonya.beahan says:

    2 stars
Wayyy too much olive oil! I ain’t trying to drink oil here 🙄

  57. 5 stars
    Short and sweet! Love it!

  58. 3 stars
It’s basically just salad, why does it need a fancy name? Not impressed.

    1. User avatar Questular Rontok says:

      4 stars
I think the fancy name just makes it sound more appetizing! Plus, it’s a nice way to use up those carrots.

  59. User avatar Fortune Teller says:

    1 star
I don’t think raw carrots taste good, yucky. Just grill ’em!

  60. User avatar dean.white61 says:

    4 stars
I don’t have a peeler—can you grate the carrots instead? I might still try it because the dressing seems spot on.

  61. User avatar Corina Halvorson says:

    4 stars
I added some walnuts for crunch and it was great! Definitely making this again.

  62. User avatar kimberlee.boehm58 says:

    2 stars
Two tablespoons olive oil feels like a lot? Mine got kinda oily. I’d cut it down and add salt gradually next time.

    1. 5 stars
I get what you mean—2 tbsp oil can definitely feel heavy, especially with juicy carrots. Next time I’ll start with 1 tbsp and adjust.

  63. User avatar larissa.stehr says:

    5 stars
This salad is super tasty! I made it for my book club, and they wanted the recipe!

  64. User avatar antone.pouros44 says:

    4 stars
Great way to eat veggies! I added some nuts for crunch. Yummy!

    1. User avatar pierre.jaskolski31 says:

      5 stars
Sounds delicious! Nuts are a great idea. I’m going to try that next time!

    2. User avatar Frankie and Benjy says:

      2 stars
I dunno, carrot ribbons? Seems kinda weird. Can’t just eat regular carrots? 🤷‍♂️

  65. 4 stars
Thanks for sharing! I think I added a bit too much lemon, tho.

  66. 1 star
One star for effort. The carrots just didn’t soften even after an hour, and it was kinda tough—maybe I did something wrong?

  67. User avatar jona.white83 says:

    3 stars
It tasted good, but mine got kinda watery after a while. Maybe my carrots were too juicy? Still, the dressing is solid—would make again with firmer carrots.

  68. User avatar hilary.kozey62 says:

    5 stars
Made it for lunch and it disappeared fast. I added a pinch of chili flakes and honestly it was perfect. Will repeat.

  69. 4 stars
The ingredients seem too simple to be good, but I was surprised. Not bad!

  70. User avatar sam.witting1974 says:

    2 stars
Im not sure about the honey in a salad. Like it’s sweet-sour, okay, but to me it overpowers the carrots a bit. Would’ve liked more savory flavor.

  71. 3 stars
I followed the recipe, but honey + lemon felt a little weird to me. Might be better with less honey? Otherwise okay.

  72. User avatar Ryan Shenlong says:

    3 stars
Mine tasted kinda too tangy—next time I’ll use less lemon juice or a touch more honey. Still a healthy win.

  73. User avatar ema.davis71 says:

    3 stars
Could’ve used more dressing in my opinion. Also, one hour in the fridge made it a bit watery—still edible though.

  74. User avatar jina.reilly32 says:

    5 stars
This is so fresh and bright—lemon + honey is a perfect combo. The carrot ribbons make it feel fancy without effort.

  75. User avatar taryn.jaskolski says:

    2 stars
Made this for a party, but no one liked it. They said it looked weird. 😞

  76. User avatar jesse.hand13 says:

    5 stars
This is super fresh and light—loved the lemon + honey combo. I tossed mine right before serving and it still tasted great. Great as a side!

  77. User avatar jack.hauck85 says:

    4 stars
Tried it but my ribbons kept breaking, maybe my peeler is bad. Flavor was still good though. Would do again with thicker ribbons.

  78. User avatar mikel.cormier1961 says:

    3 stars
Pretty good but I think the oil amount is low? Mine clung weirdly—maybe I needed more dressing. Still tasty though.

    1. User avatar MAGA2024.Trumpster says:

      4 stars
I hear you! I’ve definitely had carrots get a bit grabby if the dressing is thin—adding a splash more olive oil or lemon can help it cling better. Glad it was still tasty though.

  79. User avatar sydney.crona says:

    2 stars
Vegetable peeler salad… sounds like something from a TikTok. It’s fine, but I don’t see why it’s so hyped.

  80. 3 stars
This was fine but kinda… bland? I may have under-salted. Lemon was strong though. Would add some herbs next time (parsley or mint).

  81. User avatar emmett.bernier50 says:

    4 stars
Tried it with a regular peeler and mine came out a bit thicker, but still good. Next time I’ll peel more evenly. Also wish I had let it sit the full hour.

  82. 4 stars
Delicious and crunchy! I let it sit in the fridge for about 40 minutes like suggested and the flavor really melded. Next time I might use a tiny bit more black pepper.

  83. User avatar lonnie.nicolas says:

    4 stars
This was super quick to make. Carrot peeler slicing took me a few tries but the result was pretty. Would make again.

  84. User avatar diann.ebert2017 says:

    3 stars
I’m not convinced about honey in a salad—tastes kinda dessert-y. Still, the lemon keeps it from getting too sweet.

    1. User avatar Zelma Spinka says:

      4 stars
I get what you mean—honey *can* taste dessert-y. I actually use a smaller drizzle and it turns more bright than sweet, especially with all that fresh lemon.

  85. 5 stars
This is such a fresh, light salad—love the ribbon idea. The lemon-honey dressing really makes the carrots taste “bright” instead of bland.

  86. User avatar heriberto.abbott1955 says:

    4 stars
I love simple stuff like this. Carrots + lemon + olive oil is basically a win. 10/10 for a quick side.

    1. User avatar basementDweller says:

      5 stars
Yes!! This combo is so clean and bright. I love that it’s basically zero effort but still tastes fancy. 👍

    2. User avatar burton.runte2001 says:

      4 stars
I tried it but my carrots were kinda watery… maybe I should have dried them more? Also lemon + honey felt a little sweet for me. Still, it was fast.

  87. User avatar gaynelle.dietrich says:

    4 stars
Pretty good for something raw. I used pre-peeled carrots once and it was not as good.

  88. User avatar kurtis.schoen84 says:

    5 stars
Made it for lunch and it actually tasted fancy. I let it sit about 45 minutes and the flavors really came together.

  89. User avatar guinea pig says:

    3 stars
Honestly I’m skeptical about ‘ribbons’—I tried it and mine came out short and curly lol. Flavor was still nice, but presentation wasn’t like the picture in my head.

  90. User avatar forest.boehm61 says:

    4 stars
I’m skeptical about “carrot ribbons” but wow—actually pretty good texture. The dressing is simple and not too sweet.

  91. User avatar geoWizard says:

    2 stars
Directions are too vague. Like how long to toss? Also, “enhanced flavor” in the fridge—enhanced into what, exactly?

    1. User avatar Sanford Kling says:

      3 stars
Honestly, I think you can skip the fridge part. “Enhanced flavor” just means it sits there, that’s it. I’d toss, taste, then eat. Also the carrots will start getting watery if you wait too long.

Yeah, I agree—“toss until well coated” is super vague. I usually toss for like 30–60 seconds, just enough to gloss everything. “Enhanced flavor” is basically letting the lemon/honey dressing mellow and cling to the ribbons for up to an hour.

The dressing tasted good but my carrots got a little watery after sitting. Maybe I sliced them too thick? Still tasty though.

That makes sense—carrot ribbons can weep water if they’re a bit thick or if they sit too long. Next time I’d do thinner ribbons and try tossing right before serving (or keep them undressed until you’re ready). Glad the flavor still hit!

Not gonna lie, I was skeptical about peeling carrots into ribbons, but it was actually easy. Just don’t over-soak—serve right away like the directions say.

This is one of those “looks fancy, takes 5 minutes” salads. Served it next to dinner and everyone asked what it was.

Super fresh and light—those carrot ribbons are such a fun texture. The lemon + honey combo is legit, not too sweet. I served it right away and it was perfect.

Yes!! The lemon + honey really does balance it—nice call on serving right away. I tried letting it sit once and it got a bit watery, so your timing makes sense.

I made this but used bottled lemon and maybe my honey was too runny? Still tasty, just not as bright. Also, I think my peeler slices were thicker than ribbons—what kind works best?

My peeler kept ripping the ribbons into little shreds, not long strips. Still tasty though. Maybe I’m just not doing it right.

That sounds frustrating—carrots can absolutely “shred” if the peeler blade isn’t gliding or the carrot is a bit too hard. Try using a fresh, firm carrot and peel from the thickest side with steady, light pressure. Also, shorter strokes can cause little shreds, so slow long pulls helps. Either way, you’ve basically made a faster version of the salad and it’ll still taste great!

Honestly, I expected more. It’s okay, but kind of bland unless you really dial in the pepper and lemon.

I get you—carrot ribbons can taste kinda flat if the seasoning’s light. I usually go heavier on the pepper and make sure the lemon juice is fresh. Also tossing for a full minute helps the dressing cling.

I love the simplicity. Only thing: I added a pinch more salt and cracked pepper, just to my taste.

I tried it and the flavor was good, but my wife said it wasn’t really a ‘salad’ without greens. 🤷

Made this for lunch and it’s honestly so refreshing. The lemon-honey combo is perfect—didn’t even miss anything else.

Yes!! The lemon + honey really makes it taste bright, like a “real” salad and not just raw carrots. Glad you didn’t miss anything else 😄

Huh, I tried something similar but I added vinegar instead of honey and it was… not great. Maybe I should follow your lemon-honey idea next time. Also do you eat it right away or it gets soggy fast?
