Ingredients
  

  • 1 pre-made pie crust unbaked
  • 1 bunch asparagus trimmed and cut into 1-inch pieces
  • 4 ounces feta cheese crumbled
  • 1 cup milk
  • 3 eggs beaten
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Place pie crust into a quiche or pie pan and trim the edges if necessary.
  • Blanch asparagus in boiling water for 2 minutes, then drain and cool.
  • In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
  • Spread asparagus and feta cheese evenly over the pie crust.
  • Pour egg mixture over the asparagus and feta. Decorate with asparagus.
  • Bake in the preheated oven for 35-40 minutes or until the quiche is set and a knife inserted in the center comes out clean.
  • Allow to cool for a few minutes before serving.
