Ingredients
  

  • 200 grams firm tofu drained and crumbled
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon turmeric for color
  • 1 teaspoon soy sauce to taste
  • 1/4 cup onion chopped
  • 1/4 cup red bell pepper chopped
  • 1/4 cup spinach fresh
  • to taste pinch black salt for eggy flavor
  • to taste pinch pepper for spice

Instructions
 

  • Heat olive oil in a pan over medium heat.
  • Add onion and red bell pepper. Sauté until they start to soften.
  • Add crumbled tofu, turmeric, and soy sauce to the pan. Stir well to combine all ingredients.
  • Add spinach to the tofu mixture and cook until wilted.
  • Add black salt and pepper to taste. Mix well.
  • Serve hot with toast or as a filling in wraps.

      You can definitely try eggs instead of tofu! Just scramble them in like you would with tofu. Chicken might be too different though.
