A refreshing and healthy salad made with cabbage and coconut.
Ingredients
- 2 cups shredded cabbage
- 1/2 cup shredded coconut
- 1/4 cup cilantro chopped
- 1/4 cup mint leaves chopped
- 1/4 cup peanuts chopped
- 2 tbsp lime juice
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sesame oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded cabbage, shredded coconut, chopped cilantro, chopped mint leaves, and chopped peanuts.
- In a small bowl, whisk together the lime juice, soy sauce, honey, sesame oil, salt, and pepper.
- Drizzle the dressing over the cabbage mixture and toss to combine.
- Serve immediately and enjoy!

Easy to make! Just threw everything in a bowl, but I forgot the lime juice. Still yum tho!
