      Cooling it in the fridge may take too long! Ice water stops the cooking right away, keeping that bright color and crunch. It’s not excessive, just better technique!

      Totally get that—mine was good without it too. The ice bath is mainly to keep everything bright green and crisp, not because it “needs” it for flavor. But yeah, less fuss would be nice.

      Hmm I think the ice bath matters. If you skip it, the asparagus keeps cooking and turns softer and duller. Still tasty, but not the same texture. My salad always looks better with the shock.
