Traditional Sticky Toffee Pudding

October 18, 2024

Traditional Sticky Toffee Pudding is a classic British dessert that combines a rich, moist sponge cake with a luscious, gooey toffee sauce. This indulgent treat is beloved for its comforting, sweet flavors and its ability to satisfy even the strongest sweet tooth. Often served warm with a dollop of whipped cream, vanilla ice cream, or a generous pour of extra toffee sauce, sticky toffee pudding is a crowd-pleaser that’s perfect for any occasion, especially during the colder months when you’re craving something cozy and decadent.

The foundation of sticky toffee pudding is a soft, moist sponge made with dates, which add natural sweetness and create a wonderfully dense texture. The dates are chopped and soaked in hot water, allowing them to soften and infuse the cake with a subtle richness. Once mixed with butter, flour, and sugar, the batter bakes into a tender, dark cake with a deep, caramel-like flavor. The dates not only contribute to the taste but also help to keep the sponge moist and tender.

The star of the show, however, is the toffee sauce. Made with butter, brown sugar, heavy cream, and a splash of vanilla, the sauce is cooked until it thickens and becomes silky smooth. Once the cake is baked, it’s soaked with the warm toffee sauce, which seeps into the sponge, making it even more moist and adding layers of sweet, rich flavor. The result is a perfectly sticky, melt-in-your-mouth pudding that’s impossible to resist.

Sticky toffee pudding is best served warm, allowing the toffee sauce to remain luscious and gooey. It’s traditionally accompanied by a scoop of vanilla ice cream or a dollop of whipped cream, which adds a cool, creamy contrast to the warm, sticky cake. For an extra touch of indulgence, some recipes call for additional toffee sauce drizzled over the top before serving.

This comforting, nostalgic dessert is a must-try for anyone who loves sweet, rich flavors. Whether you’re enjoying it at a festive meal, serving it as a dessert for family and friends, or simply treating yourself, Traditional Sticky Toffee Pudding is a satisfying and unforgettable treat.

Sticky Toffee Pudding is a classic British dessert featuring a rich, moist cake made with finely chopped dates, served with a luscious toffee sauce. It’s known for its delightful combination of sweetness and warmth, making it a perfect comfort food choice.
Servings 1 people
Prep Time 20 minutes
Cook Time 40 minutes
Total Time 1 hour

Ingredients

  • 200 g pitted dates chopped finely
  • 1 teaspoon baking soda
  • 250 milliliters water boiling
  • 60 g butter softened
  • 150 g brown sugar packed
  • 2 unit eggs beaten
  • 200 g self-raising flour sifted
  • 1 teaspoon vanilla extract
  • 200 g dark brown sugar for the toffee sauce
  • 200 milliliters heavy cream for the toffee sauce
  • 100 g butter for the toffee sauce
  • 1 teaspoon vanilla extract for the toffee sauce

Instructions

  • Preheat the oven to 180°C (350°F). Grease a baking dish.
  • Combine the chopped dates and baking soda in a bowl. Pour over the boiling water and let stand for 10 minutes to soften.
  • In a large bowl, cream the butter and brown sugar together until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  • Gently fold in the flour and the soaked date mixture until well combined.
  • Pour the batter into the prepared baking dish and bake for 35-40 minutes or until a skewer inserted into the center comes out clean.
  • While the pudding is baking, prepare the toffee sauce. In a saucepan over medium heat, combine the dark brown sugar, butter, and heavy cream. Bring to a boil, then reduce heat and simmer for about 5 minutes, stirring constantly until thickened. Stir in the vanilla extract.
  • Once the pudding is done, let it cool slightly. Serve warm with the toffee sauce drizzled generously over the top.

I don’t know why people love this so much. It was okay, but kinda too sweet for me. Just my opinion.

  2. 5 stars
This is the best sticky toffee pudding I’ve ever made! Everyone loved it!

    1. User avatar particia.bartell says:

      5 stars
I’m glad you loved it! Sticky toffee pudding is such a classic. Did you add any nuts or maybe ice cream on the side? That’s what I like to do!

  3. 4 stars
I don’t trust 200 g dates unless they’re super soft. Mine were kinda dry and I had to soak longer than 10 minutes. Otherwise, still tasted great.

  4. User avatar robbin.torphy1983 says:

One teaspoon baking soda for 200g dates seems like too much… mine tasted slightly soapy (maybe my baking soda was old). Not gonna lie, I wasn’t impressed.

    1. User avatar Herbert Lesch says:

      2 stars
I get what you mean—baking soda can be *very* noticeable in sticky toffee. If it tasted soapy, I’d blame old soda or too long a soak for the dates. I usually go by fresh baking soda + quick mixing.

  5. User avatar cindi.reinger15 says:

I’m skeptical about “self-raising flour” when most recipes I see use plain flour + baking powder, but it still rose nicely. Flavor is amazing.

    1. User avatar maryrose.wyman says:

      4 stars
Honestly same—self-raising flour always feels a bit like cheating, but if it still rose and tastes great, I’m not complaining 😄

  6. User avatar sherley.harber99 says:

    4 stars
Not sure about the baking soda + boiling water step—mine bubbled like crazy but then turned kind of caramel-y. Tasted fine, just looked weird.

  7. User avatar roger.halvorson81 says:

    3 stars
I’ve never heard of this before but I tried it because my friend recommended it. Not my favorite, but I can see the appeal. A bit too rich for me.

  8. 5 stars
I was skeptical about 200g dates plus baking soda, but it actually comes out moist and tender. Very classic sticky toffee vibes. Would totally make again for guests.

  9. User avatar kurt.gleichner says:

    3 stars
This recipe is great but my pudding came out a bit dry. Maybe I overbaked or somethin. Next time I’ll watch it closer!

  10. User avatar Genghis Khan says:

    2 stars
Too much butter! Is there a healthier version? My waistline can’t take it 😉

  11. 5 stars
Just made this for the first time and wow, it’s AMAZING! I added nuts for crunch. Yum! 🙌

    1. User avatar leota.kohler1972 says:

      2 stars
Really? I tried it and found it way too sweet. Maybe it’s just me, but it was too rich.

    2. User avatar jean.wunsch67 says:

      5 stars
Glad you enjoyed it! Adding nuts sounds like a great twist. I might try that next time!

  12. 4 stars
Is 180°C really right? Seems too hot. I used 160°C and it turned out fine.

    2. User avatar agustin.howell83 says:

      2 stars
Candy shop? Really? This seems way too sweet for me.

  14. User avatar maisha.keebler says:

Delicious! 😍 Used coconut cream instead of heavy cream, turned out great!

    1. User avatar bernarda.howell30 says:

      4 stars
Coconut cream? That’s interesting! I would have never thought to swap that. Sounds awesome! 😋

  15. User avatar broderick.rowe says:

    2 stars
I’m not sure about using self-raising flour here—mine rose more than expected and came out kind of bready. Maybe my flour brand is different? Sauce still saved it.

    1. User avatar felix.oconner says:

      4 stars
That’s interesting—self-raising flour can vary a lot by brand. If yours has a stronger leavening, it can definitely come out more bread-y or “puffy” instead of tender.

    2. 4 stars
Mines did the same thing at first 😅 I think I overmixed the batter after adding the flour. Next time I’ll fold just until combined. Sauce sounds like a lifesaver though!

  16. User avatar lucille.macejkovic says:

    4 stars
I loved making this! Used dates from the farmer’s market. Impressive and people thought I was a chef!

  17. User avatar duane.feest says:

Sticky toffee pudding is my favorite dessert, and this recipe gets it right. The toffee sauce is the star—smooth and thick without being too sweet for me.

  18. User avatar sina.kuphal61 says:

    5 stars
Super comforting, like bakery sticky toffee pudding vibes. The date step with baking soda makes a big difference. Next time I’ll bake 2-3 minutes less since my oven runs hot.

    1. User avatar Wanita Bartoletti says:

      5 stars
Yes!! That date + baking soda step is *everything*. I tried it once without letting it sit and it was way flatter—yours sounds perfect.

  19. User avatar laurine.howe75 says:

    2 stars
I don’t know, my cake turned out more like a brick. Could be my oven though? Not sure! 😕

    1. 3 stars
A brick? Yikes! Maybe it was overcooked or too much flour? 😳 Baking can be tricky sometimes!

    2. User avatar danial.braun2006 says:

      4 stars
Sounds like somethin’ went wrong! Maybe check your oven temp next time? It can really mess things up! 🍰

  20. 5 stars
Sticky toffee pudding always feels fancier than it is. I love how simple the method is—no complicated ingredients, and the sauce is basically magic.

  21. 2 stars
Too sweet for my taste! I bet it could use less sugar. Sorry, not a fan.

  22. User avatar terminatorXYZ says:

    4 stars
This reads like an exact science, but my eggs were cold and the batter looked a little weird when I added them. I had to gently mix longer. End result: yummy, but definitely fussy.

  23. User avatar freddie.jast says:

    4 stars
Looks delicious 😋 also dates are expensive where i live… but i might splurge

  24. 5 stars
Best dessert ever! Super easy to make and tastes divine. My family devoured it!

  25. User avatar merlene.lakin says:

    3 stars
My sauce split a little. I think I simmered too aggressively. Still good, but next time I’ll keep it at a gentle bubble.

  26. User avatar cassi.sipes76 says:

    3 stars
Ok but 1 tsp baking soda with 200g dates… won’t it taste a bit weird? I’ve had baking soda get a medicinal vibe before if the balance is off.

  27. User avatar ali.predovic40 says:

    3 stars
I messed up and used regular flour instead of self-raising 😬 But even then it tasted like toffee cake. Would probably be better with the correct flour, though.

  28. User avatar The Allitnils says:

    5 stars
The sauce is where it’s at—so rich and sticky. I followed everything and it came out glossy. Might even double the sauce next time (no regrets).

  29. User avatar denyse.douglas94 says:

    5 stars
super good! my family loved it, especially the sauce!

  30. User avatar marline.schmitt says:

    4 stars
I was skeptical about the baking soda + dates step, but it really does make the texture softer. Mine took closer to 40 minutes, but the skewer test saved me.

  31. User avatar trisha.hammes50 says:

    3 stars
The flavor is there, but mine was kinda dense. I think I overmixed the flour after folding, because I was nervous about lumps.

    1. User avatar Rulindil says:

      5 stars
Ahh yeah, that dense texture usually screams overmixing after the flour goes in. Next time try folding just until you don’t see dry flour—lumps are way better than tough batter 😅

  32. User avatar halflife4 says:

    4 stars
I tried it and added nuts like walnuts, yum! Still tastes like sticky toffee pudding but with a crunch!

  33. User avatar genie.klocko96 says:

    5 stars
Made this last weekend—so rich and sticky! The dates really give it that deep caramel vibe. I baked mine closer to 40 min and the skewer came out perfect. Sauce is the star.

    1. User avatar thanh.swift1958 says:

      5 stars
I think the sauce really does carry the whole thing. I made this and mine was extra thick when I simmered a bit longer. So good with vanilla ice cream 😄

    2. User avatar NAFO.SUPREMACY says:

      5 stars
Yes!! Totally agree—the dates make it taste like deep caramel instead of just “sweet.” Glad your skewer was perfect at 40 min.

  34. User avatar Hye Nitzsche says:

    5 stars
Dates + baking soda soaking in boiling water is a great idea. I’ve never done the “let stand 10 minutes” step before and it made the texture way softer. Vanilla in both parts was perfect.

  35. User avatar Frost Atronach says:

    2 stars
Wow, this is a lot of work for a cake, I think I’ll stick to store bought! 😅

  36. 5 stars
OMG the toffee sauce was the best part. I simmered closer to 7 minutes and it got that perfect spoon-coating thickness. Will absolutely make again.

  37. User avatar oPandariaNo says:

    4 stars
Why is it called sticky? The sauce was kinda runny. Anyone else had this problem? 🤷‍♂️

  38. User avatar neil.botsford1972 says:

    3 stars
Followed instructions but my pudding kinda sank… what did I do wrong? 😩

  39. User avatar jessi.boyer46 says:

    5 stars
Quick and easy! Love the caramel sauce part! Even my kids liked it, which is something.

  40. User avatar melba.nader says:

    3 stars
This is an okay dessert, not life-changing. The pudding part is nice, but I found it a little sweet even with the drizzle. Still, friends ate it fast.

  41. User avatar clark.heller1961 says:

    1 star
This is not an authentic pudding. Real sticky toffee pudding is made with treacle, not brown sugar. Just saying. 😤

  42. User avatar Jade Altenwerth says:

    5 stars
Yummm! Best dessert ever! My kids loved it and so did I, super easy to make!

  43. User avatar aurore.gaylord says:

I was skeptical at first. It seemed too sweet, but after trying it, I was surprised how good it tastes! Just be careful with the sugar.

This pudding is to die for! So rich and delicious. My whole family loved it! 🍮

    1. User avatar Samwise Gamgee says:

      3 stars
Looks good, but isn’t it just too sweet? I might try it with less sugar next time.

    2. 5 stars
Absolutely agree! This is my go-to dessert for family dinners. Sooo good! 😍

This pudding is AMAZING! Just like my grandma used to make. So rich and sweet!

    1. User avatar ArabianNights says:

      5 stars
Wow, this sounds so good! Can’t wait to try it — my grandma made it too, but I can never get it right. Maybe this recipe will help!

  48. User avatar arden.willms says:

    5 stars
Made this last night—so good. The dates really give it that rich, almost caramel-y depth. I baked mine closer to 40 minutes and it came out perfectly sticky.

  49. User avatar diamond.stamm2 says:

    4 stars
Easy to follow recepie! My kids enjoyed helping mix everything together. 🥳

  50. User avatar maida.smith12 says:

    5 stars
Made this last night and it was dangerously good. The dates taste super rich, and the sauce thickens exactly how you want—no graininess. My only tweak: baked mine closer to 40 min.

  51. User avatar reuben.koelpin93 says:

    4 stars
Really tasty, but I had to adjust the sauce a bit. Mine thickened slower than expected, so I simmered like 8-10 minutes. Still turned out great.

  52. 2 stars
Um, is this even a real recipe? Doesn’t seem right to me. Plus, what’s with the dates?! Why not just use chocolate?

    1. User avatar angie.waters says:

      2 stars
I don’t think dates can replace chocolate… Just sounds weird to me. What’s next, broccoli in cookies?

    2. User avatar Mrs. Hans Runolfsdottir says:

      4 stars
Actually, dates give it a lovely flavor! It’s a classic recipe for a reason. You should try it before dismissing it!

  53. 5 stars
Made this last weekend—so rich and sticky! I used slightly less sauce and still couldn’t stop eating it. Super comforting.

    1. 5 stars
Yes!! That sticky rich center is the best part. I swear the sauce just turns everything into comfort food perfection.

  54. User avatar randy.hauck says:

    3 stars
My toffee sauce turned grainy for some reason. I think I boiled it too hard—any tips? Flavor was still good though, so I didn’t fully mess up.

  55. User avatar carmelia.stoltenberg76 says:

    5 stars
The dates make this so unique. I’ve never had anything like it before! Great recipe! 🎉

  56. User avatar lucrecia.balistreri says:

    2 stars
I tried making this, but it turned out so soggy. What did I do wrong? I think I overcooked it.

  57. 3 stars
I didn’t understand why we boil the dates… seems weird but okay? 😂

  58. User avatar MAGA2024.Trumpster says:

    4 stars
Pretty solid recipe, but 180°C felt a bit low for my oven. I had to bake a little longer and cover loosely with foil halfway through so it wouldn’t over-brown.

  59. User avatar erik.hartmann says:

    3 stars
Mine sank a little in the middle (probably my folding was too rough). Still tasted great though—like caramel pudding. Next time I’ll be gentler and check with a skewer earlier.

    1. User avatar michal.kuvalis30 says:

      3 stars
Mine did the same (sank in the middle) and I think my oven runs hot. I also baked longer than 40 min but still gooey inside—maybe your skewer test should come out like crumbs?

    2. User avatar tanesha.rutherford says:

      5 stars
Ahh that sounds exactly like what happens when the folding is a bit too aggressive—good call on being gentler next time. “Caramel pudding” is a great sign though!

  60. User avatar pete.wilderman1975 says:

    4 stars
I didn’t have all the ingredients so I used regular sugar and no dates. It still tasted decent.

  61. 2 stars
Too much sugar, honestly. Also 180°C for 35-40 minutes—my oven runs hot and it got kinda dark before the skewer came out clean. Not terrible, just not my thing.

  62. User avatar wellRespected says:

    5 stars
Made this last weekend and it’s *dangerously* good. The date flavor is cozy and the toffee sauce actually thickened like the recipe promised. 10/10 comfort dessert.

  63. User avatar Storm Atronach says:

    4 stars
Pretty good, but my pudding came out a bit dense. I think I overmixed the flour part. Still delicious with the sauce though.

    1. User avatar tad.hodkiewicz23 says:

      5 stars
That makes sense—overmixing the flour can definitely make it dense. Next time I’d fold just until you don’t see flour and stop right away.

    2. User avatar joe_banana says:

      4 stars
Dense pudding buddies! I had the same problem once. I think I cooked it a couple minutes too long too—do you happen to know if your skewer came out truly clean?

  64. User avatar Rickey Ullrich PhD says:

    4 stars
I’m skeptical about the ‘bake 35-40’ because my oven runs hot. I went 38 mins and it was perfect, but if you have a temperamental oven, watch it.

    1. User avatar brett.schmidt27 says:

      5 stars
Yeah that tracks—every oven is different. I did 38 mins too and it was spot on. I’d rather check early than risk drying it out.

    2. 3 stars
Wait—does “skewer clean” mean totally dry? Mine came out with sticky crumbs at 35, so I baked longer and it turned out kinda tough. Maybe that’s why.

  65. 5 stars
This sounds so comforting. The date soak step is genius—those little bits always make it taste richer. I’ll definitely try it with a generous drizzle.

  66. User avatar Theresia Crona says:

    2 stars
Came out a little too rich for me… maybe my cream was extra thick. Also I accidentally used regular flour not self-raising once—don’t do that lol.

    1. User avatar smartestRedditor says:

      5 stars
Regular flour instead of self-raising is probably the sneaky culprit too. I’ve done that once—came out dense and super rich feeling. Your “don’t do that” made me laugh but you’re right 😂

    2. 4 stars
Ugh I feel you—sticky toffee puddings can go from “perfect” to “too rich” so fast. If your cream was thick, that’ll definitely make the sauce heavier. Next time maybe add a splash more cream or simmer it a touch less.

  67. 3 stars
Super easy recipe, but it needs more vanilla! The sauce is too sweet for my taste. 😬

  68. 5 stars
Wow this was sooo sticky I burnt my tounge lol. Followed recipe exactly except I forgot the vanilla in the pudding (oops) but it still slapped. Will make again.

  69. User avatar Mellie Cummerata DDS says:

    2 stars
Not sure about the measurements—200 g dates + 1 tsp baking soda + 250 ml boiling water seems like a lot of liquid. I let it sit, but the batter felt wet before baking.

  70. User avatar lecia.little says:

    5 stars
Made this last weekend and it was dangerously good. The toffee sauce turned glossy and thick just like you said—my family kept going back for “one more bite.” 10/10 comfort dessert.

  71. 3 stars
I don’t get why people rave about this. It was just okay, a bit too sweet for my taste.

    1. User avatar jerica.cartwright says:

      4 stars
I totally agree with you! It’s way too sweet for my liking as well. Maybe try reducing the sugar next time?

  72. User avatar rudolph.buckridge says:

    3 stars
The texture was good, but my skewer came out “clean” yet the center was slightly underdone. Next time I’ll go closer to 40 minutes and check earlier.

    1. User avatar rich.landlord says:

      5 stars
Totally been there—“clean skewer” can fool you, especially with sticky/dense puddings. Checking around 35–40 mins and looking for a slight wobble in the center is a solid move.

    2. User avatar Fiddlesticks says:

      4 stars
Maybe your oven runs hot? Also I think 40 min is perfect—mine takes like 38 every time. Still tastes fine even if a tiny bit under. 😉

  73. User avatar Sherie Denesik says:

    2 stars
I think the baking soda amount might be a bit much? The flavor was okay but it had a slight tang, and I followed the steps. Maybe my dates were extra dry.

    1. User avatar don.rutherford70 says:

      3 stars
Tang is usually from the baking soda, yeah. But honestly 1 tsp with 200g dates is pretty standard-ish. If your dates were extra dry, they might not hydrate evenly, so the batter chemistry can feel “off”.

I’ve made this and that 1 tsp baking soda can definitely leave a little tang, especially if your dates are dry. Next time I’d try 1/2 tsp and see. Also make sure you let the date-water sit the full 10 min.

I tried something like this once and my sauce never thickened—kept getting grainy. If that happens, what’s the fix? Still, I like the ingredients list.

Good flavor, but mine was a bit dense. I think I overpacked the flour when sifting—next time I’ll be more careful. Still, the toffee sauce thickened nicely and everyone went back for seconds.

Glad it still came out tasty! Dense sticky toffee usually means a little too much flour or not enough folding—your instinct about packing it sounds right. Next time try spooning flour into the measuring cup and sift again gently.

    2. 4 stars
Mine was the same once—thought I followed the recipe but I definitely pressed the flour down. Also I started stirring the flour more than “gently fold,” and that didn’t help 😅 Yours sounds like it’s mostly on the flour amount.

  76. 3 stars
I followed it pretty closely, but mine turned out a bit dense. I think I overmixed the flour? Still tasty though, and the sauce saved it.

Made this for a Sunday dessert night and it was gone FAST. The sauce is legit—thick, glossy, and super buttery. I used slightly less sugar once and still loved it.

Directions are clear, but I’m confused by the “2 unit eggs” part. I used large eggs anyway and it worked, just wish it said a specific size/grams.

Not sure about the 200 ml heavy cream with 100 g butter—mine split slightly when simmering. Still tasted good though. Maybe I didn’t stir enough or my heat was too high.

I’m skeptical about how “easy” it is with all the steps, but honestly it came together. The boiling water + baking soda with the dates smelled kind of wild for a minute, then turned great.

Not sure about the baking soda step… I forgot to sift the flour and it still worked, but the texture was a little off. Maybe just my oven though.

  82. 4 stars
Made it with a bit less sugar and it still turned out sweet enough. Dates + baking soda step is key—smelled amazing while baking.

I love dates but 200g feels like a lot. That said, the flavor is great and not too sweet once the sauce is balanced.

I’m skeptical about “self-raising flour” working with dates and soda… but okay, I tried it. It came out dense, but sweet and rich. Would make again maybe, if I can find the same flour.

    Five stars. sticky. toffee. yes.

Five stars!!! This is exactly the sticky, toffee-y vibe I want. The sauce thickens like magic.

Way too sweet for me. The toffee sauce thickened fast, but I’d cut the dark brown sugar next time. Great texture otherwise.

This is dangerously close to my favorite pub pudding. The toffee sauce thickened perfectly for me—just keep stirring like the recipe says.

    1. 5 stars
Yes!! Exactly what I wanted—my sauce usually turns grainy, but stirring constantly saved it. Glad you nailed it.

Followed it exactly and mine rose beautifully. The skewer test came out clean at 37 minutes. Will bake again!

Love hearing that! Congrats on nailing the skewer test—37 minutes is spot on for mine too. Definitely making another batch soon 😄

I’m curious—did you chop the dates really fine? Mine always feels a bit lumpy unless I go super small.

The toffee sauce is where it’s at. I simmered the full 5 minutes and stirred constantly like the instructions said—thick, glossy, and not too sweet. Great recipe.

This tasted like Christmas even though it’s September 😅. I added a tiny pinch of salt to the sauce and it made the flavors pop.

I followed it pretty closely, but I think I underbaked mine by like 5 minutes. Center was a bit gooey (not in a bad way), and the flavor was still spot on. Next time I’ll trust the skewer test more.

This is one of those recipes where you can’t be lazy with the stirring. When you do it right the sauce is silky and thick.

    1. 3 stars
I’m not gonna lie, I always stir like… “whenever I remember.” Still tastes good to me. Maybe I just got lucky? 😂

    2. User avatar rich.landlord says:

      5 stars
Yes! I learned the hard way—if you don’t stir the toffee sauce it goes grainy and sad. Constant attention = silky magic 😄

  93. 2 stars
Looks amazing but I don’t have heavy cream. Can I use milk? Kinda worried it won’t thicken tho.

  94. User avatar Tena Ko'sah says:

It was good but… I found it a little too sweet for my taste. Maybe cut the dark brown sugar in the sauce by 20-30g next time.

I’m picky about sticky toffee pudding, but this recipe looks pretty solid. 180°C for 35-40 minutes feels right. I might add a pinch of salt though.

    1. User avatar joeann.abernathy3 says:

      5 stars
Totally agree—180°C and 35–40 min is pretty much the sweet spot for me too. I also love adding a tiny pinch of salt to the batter; it really makes the toffee taste deeper.

I’m skeptical about only simmering the sauce 5 minutes. Mine usually needs longer to actually thicken—otherwise it’s more like caramel soup. Still, the dates + baking soda method sounds good.

  96. 3 stars
Ummm I think 200 ml heavy cream is like… not enough? My sauce didnt thicken at all until I added more time and kept stirring constantly. Still tasty but stressful lol

    1. 5 stars
I totally get the stress 😅 I’ve had sauce behave differently depending on the cream (and how hot my simmer actually is). 5 minutes might be short—mine usually takes closer to 7-10 till it coats a spoon.
