      Totally get the nervous part—jam can look runny for a while and then suddenly thicken when it hits the right boil/simmer stage. As for storage, with this recipe it should be fine in the refrigerator, but I’d treat it as a “short shelf life” thing (usually a few weeks). If it smells off or gets moldy, toss it.
