Maybe your eggs were the wrong size? Or your oven runs hot/cold. Honestly I always bake these longer than the recipe says. If the inside was gummy, it didn’t cook through yet. I’d give it another shot or lower the honey? idk.
Ugh, sorry that happened! “Toothpick clean but gummy inside” is usually underbaking or not mixing enough. I’d try baking 22–25 min and also make sure the center is set (not jiggly) vs just relying on the toothpick. What size muffin cups did you use?
