Ingredients
  

  • 1 cup pineapple chunks fresh or canned, drained
  • 1 tablespoon ginger grated
  • 1 cup lemon juice freshly squeezed
  • 1-2 tablespoons honey to taste
  • 2 cups water cold, or sparkling water for fizz
  • to serve optional ice cubes
  • to garnish optional mint leaves fresh

Instructions
 

  • In a blender, add pineapple chunks, grated ginger, freshly squeezed lemon juice, and honey.
  • Blend the mixture until smooth and well combined.
  • Strain the blended mixture into a pitcher to remove any pulp.
  • Add cold water to the pitcher and stir well. If using sparkling water, add it just before serving to maintain the fizz.
  • Serve the lemonade over ice cubes in glasses. Garnish with mint leaves if desired.
