I had the same problem. Next time I’m gonna dissolve the sugar first—like warm water or syrup—and then add the matcha. Also maybe you’re sprinkling too dry on top? Try coating in smaller batches and tossing fast.
That grainy sugar is usually from not enough mixing/heating. I’d whisk the matcha + sugar really well (or sift them) and then lightly warm the coconut oil so it’s still fluid, so it helps melt the sugar when you toss.
