Zucchini muffins are a wonderfully moist and subtly sweet baked good that combines the goodness of fresh zucchini with the warmth of cinnamon and nutmeg. The addition of zucchini, a mild and versatile vegetable, keeps these muffins light yet packed with moisture, making them a perfect choice for breakfast, snacks, or even a quick treat for tea time. The best part? The zucchini is so finely grated that you almost forget it’s there, but it provides the perfect texture and adds a sneaky dose of nutrients.
The flavor profile of zucchini muffins is comforting and spiced, thanks to the use of cinnamon, vanilla, and a touch of nutmeg. The zucchini itself doesn’t overpower the muffin but blends seamlessly into the batter, creating a tender, almost cake-like consistency. Whether you bake them with a sprinkle of walnuts, chocolate chips, or even a swirl of cream cheese, these muffins are highly customizable to suit your taste preferences. The zucchini adds a subtle, earthy sweetness that balances perfectly with any additional flavor you choose to incorporate.
Beyond their flavor, zucchini muffins are also a great way to use up the abundance of zucchini during the summer months. It’s a fantastic way to sneak some extra vegetables into your diet, especially for kids who might not always be fans of green vegetables. Packed with fiber, vitamins, and antioxidants, zucchini offers a nutritional boost to this otherwise indulgent treat.
Zucchini muffins also make for an excellent make-ahead snack. They store well in the fridge for a few days and freeze beautifully for longer storage, making them a convenient option for busy mornings or lunchboxes. Whether you’re serving them as a snack at a gathering or enjoying them solo with a cup of coffee, zucchini muffins are a versatile and delicious option that will satisfy your sweet cravings while providing a little extra nutrition.

meh… I expected them to be fluffier. They were kinda flat. Not sure if I’ll make again.
Try adding more baking powder next time or some extra egg whites. They might puff up better! 😊
I am not a zucchini fan but my kids loved these! Guess they do taste good even if you can’t see the green stuff. 😂
These muffins are amazing! The zucchini makes them so moist. I added chocolate chips and they were even better!
I dunno, I tried this recipe and it turned out a bit bland. Maybe I did something wrong but I think it needs more sugar or spices.
Hmmm, mine didn’t rise at all. Pretty flat muffins. What did I do wrong?
Made these and they burnt at 20 mins! Oven is too hot or recipe off? 🙁
I wasn’t sure about zucchini in muffins, but these were surprisingly good. I added some chocolate chips for extra sweetness.
I was skeptical too, but these muffins are a revelation! The chocolate chips really make them special. Thanks for sharing!
Zucchini? In muffins? Sounds weird! But if you say it’s good, I might give it a try. Just not sure about that combo.
These muffins are a game changer! Moist and flavorfull. Will def make again.
Zucchini in a muffin? Really?? Who thought of that? Not sure if I trust this recipe.
Baking soda and baking powder together? Isn’t that like mixing water and fire? 🤔
These muffins are a game changer! So moist and tasty. My kids loved them!
Yummy! Mmm have you tried with nuts? I just added some and it was great.
I love the idea of adding nuts! What kind did you use? I think walnuts would be great! 😊
These muffins are amazing! So moist and flavorful. My kids loved them! Definitely making again.
Yum! I added chocolate chips and they were heavenly. Definitely making these again!
I was skeptical about zucchini in muffins, but these are surprisingly good! Will make again.
Used whole wheat flour instead of all-purpose. Healthier, right?
These muffins are seriously delicious! My kids can’t even tell there’s zucchini in them. 5 stars!
Muffins were fine. Just fine. Not the best I’ve had but not the worst either. Pretty average recipe.
I don’t know, these just seemed a bit bland to me. Maybe I expected too much? I’d give it a 3.
Bland? Really? I thought they were delicious! It might just be your taste buds. 🤷♂️
I think they might need more spices. Maybe try adding some nutmeg or a pinch of cayenne? It could spice things up!
Zucchini? More like boring! I prefer chocolate chips. Who needs veggies in a muffin?
Nah, I don’t think muffins should have veggies. I like my muffins sweet and chocolaty!
But zucchini makes it moist and yummy! You gotta give it a chance. 😄
Simple and quick! Mine took 30 minutes to bake tho. Great recipe!
Glad to hear it worked for you! Sometimes ovens can be a little off. Mine took longer too but worth it!
Not a fan. They tasted kinda bland to me. Wish I added more sugar.
These muffins turned out amazing! So moist and flavorful! Definitely a recipe I’ll keep making.
Glad to hear that! These muffins are my go-to recipe too. You can even add nuts or chocolate chips for extra flavor!
Amazing? Really? I tried this recipe and it was way too sweet for me. Maybe I did it wrong…
Zucchini? Really? Sounds weird. I might just stick to chocolate chips. 😂
Seriously? That’s like putting veggies in dessert. No thanks, I’ll take my chocolate chips over that any day! 🤷♂️
Zucchini in muffins is actually delish! Gives them a moist texture. You should give it a try! 🍰
Honestly not as good as I thought. They turned out super dry. I might have overcooked them.
Not my fave. They came out a bit soggy for me. Maybe less zucchini next time? 🤔
These muffins are great, but why is everyone acting like they’re gourmet? They’re just muffins.
Um, what happens if you forget the egg? Is it still ok? Asking for a friend…
You can still make muffins without egg! They’ll just be a bit different in texture. Maybe try a flax egg as a substitute?
Idk man, sounds risky. Eggs are important for binding! Good luck to your friend, lol.
Easy to make but a bit bland. I added some chocolate chips, which helped!
I find zucchini muffins sooo delicious! But chocolate chips? That’s a game changer! I’ve never thought of that. 🤔
Bland? No way! Zucchini muffins have their own flavor. Maybe just try a pinch more spice next time.
Not that great, the texture was off. Maybe it’s just me.
I had the same issue! The texture was weird for me too. Maybe they just need to be baked a bit longer?
I was skeptical about zucchini in muffins, but they turned out surprisingly good. The cinnamon was a nice touch!
Yummy! The cinnamon really brings out the flavor, love it!
Totally agree! The cinnamon makes all the difference! Can’t wait to make these again.
Zucchini in muffins? Really? Never thought it could work but this is delish! I’m a convert now!
I made these for my neighbor and they loved it 😊. Easy recipe, thanks!
These muffins are sooo good! I didn’t even tell my kids they had zucchini in them!
So good!!! I eat them for breakfast and they are just perfect. 1000% recommend!
Eh, they were okay. I expected more flavor. Maybe too much baking powder?
Great recipe! 10/10 would bake again. 🍞
I am giving it a 1 because my muffins burnt. Opened the oven, and boom – smoke everywhere.
Soo easy to make! I can’t believe how simple this was. I’m gonna try with other veggies too!
Zucchini in muffins? What a weird combo. Never thought this would work.
These muffins were a hit at my house! My kids loved them and didn’t even notice the zucchini!
I followed the recipe exact but they came out too dry. Might need to tweak it next time. 😕
I tried these but I think I overmixed. They came out kinda dense. Not sure I’ll try again.
Yummm! I added chocolate chips and it was divine 😍. Can’t go wrong with choclate! 😜
I don’t get why you would ruin zucchini muffins with chocolate, that’s just wrong 😒.
Chocolate chips? That’s a game changer! I gotta try that 😍
I replaced the oil with applesauce and they turned out great! Super moist.
I didn’t have brown sugar, so I used honey instead. They turned out fine! Thx for sharing.
Can this be done without eggs? Just wondering if I can use a substitute.
You can use applesauce or mashed bananas as an egg substitute. I’ve done it before and it works great!
Yuck! Didn’t rise at all. Followed the recipe exactly but ended up with dense little bricks. Never making again.
Easy recipe, went well with my coffee! Just the right amount of sweetness. Yum!
Sounds delicious! I’ll try this recipe with my morning coffee tomorrow. Thanks for sharing!
I don’t know, zucchini in muffins? That seems a bit weird to me. But hey, if you liked it…
Zucchini in muffins? That’s weird. But I gave it a shot and they were surprisingly good! Who knew?
Good recipe, but I want to see nutrition facts. Are these healthy?
Just sick of zucchini recipes! Why do we have to put it in everything?? Pass.
Recipe needs more info, like how to tell if they are done. I don’t trust toothpicks.
You can tell they are done when they are golden brown on top and spring back when you touch them. Toothpicks are just one method. Try the touch test!
I don’t know, they didn’t rise like I thought they would. Maybe I did something wrong?
These muffins are life. Seriously, like who could complain about zucchini? 🍰👍
Yum! I added chocolate chips and it was delish!!
Chocolate chips in zucchini muffins? Genius! I’m trying that next time! 😍
Zucchini in muffins? Weird. But I tried it and I’m shocked, they taste pretty good!
Zucchini really is a game changer! Who woulda thought?!
These muffins were a total hit with my kids! Super moist and tasty. Will make again for sure!
Muffins rocked! One cup zucch. = whole lotta yum!
Totally agree! Zucchini makes everything better. Can’t believe how moist they turned out!
Zucchini muffins?? Sounds weird but they actually taste great! Who knew?
Y’all, I forgot the baking powder! Mine flopped but the flavor was still ok.
I used coconut oil instead of veg. oil and they were delicious! My kids loved them! 😋
Super easy to make! I might try adding nuts next time to give it a little crunch. Yum!
These were okay but my friend said they tasted funny. I don’t know. 🤔
