Ingredients
  

  • 1 cup fresh spinach washed and dried
  • 1 cup all-purpose flour
  • 1 cup milk any kind
  • 1 large egg beaten
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 tablespoon olive oil for cooking

Instructions
 

  • In a blender, combine spinach, milk, and egg. Blend until smooth.
  • In a mixing bowl, combine flour, baking powder, and salt.
  • Pour the spinach mixture into the dry ingredients and stir until just combined.
  • Heat olive oil in a non-stick skillet over medium heat.
  • Pour 1/4 cup of batter onto the skillet and cook until bubbles form on the surface, about 2-3 minutes.
  • Flip and cook for another 1-2 minutes until golden brown.
  • Repeat with remaining batter. Serve warm.
