In a blender, combine spinach, milk, and egg. Blend until smooth.
In a mixing bowl, combine flour, baking powder, and salt.
Pour the spinach mixture into the dry ingredients and stir until just combined.
Heat olive oil in a non-stick skillet over medium heat.
Pour 1/4 cup of batter onto the skillet and cook until bubbles form on the surface, about 2-3 minutes.
Flip and cook for another 1-2 minutes until golden brown.
Repeat with remaining batter. Serve warm.
