Borscht soup is one of those dishes that carries both comfort and culture in every spoonful. Known for its striking ruby-red color, this beet-based soup is beloved across Eastern Europe, with each region, and often each family, putting its own spin on the recipe. At its heart, borscht soup is about balancing earthy, sweet, sour, and savory flavors in a way that feels nourishing and deeply satisfying.
The signature ingredient is, of course, beets. They provide the vibrant color and subtle sweetness that define the dish. But borscht is rarely just about beets alone. Cabbage, potatoes, carrots, onions, and sometimes beans or meat are simmered together to create layers of texture and flavor. A splash of vinegar or lemon juice adds brightness, while fresh dill gives a fragrant lift. Many versions are finished with a dollop of sour cream, which melts into the soup and creates a creamy contrast to the tangy broth.
What makes borscht soup particularly special is its versatility. It can be served hot, making it a hearty winter soup, or chilled, where it becomes refreshing and light for summer. Some recipes feature beef or pork for added richness, while vegetarian versions let the vegetables take center stage. Each variation tells a different story about the people and traditions behind it.
Beyond flavor, borscht soup has a cultural role that makes it more than just food. In countries like Ukraine, Russia, Poland, and Lithuania, it often appears at holidays and family gatherings, symbolizing heritage and connection. For many, the aroma of simmering borscht is tied to memories of home kitchens and shared meals.
Nutritionally, it is also a smart choice. Beets bring antioxidants and fiber, while the mix of vegetables makes it a vitamin-packed dish that feels both wholesome and filling. It manages to be hearty without being heavy, which is part of why it has endured for generations.
Borscht is more than a soup, it is a culinary tradition that highlights how simple, humble ingredients can create something memorable. Whether enjoyed steaming hot with bread on a cold evening or chilled on a summer afternoon, it is a dish that nourishes both body and spirit.

Quick and easy recipe. Perfect for busy weekdays. Loved the color too!
I agree! Borscht is super colorful and tastes amazing! 😍
So good. My whole family couldn’t get enough! Even the kids ate it.
That’s amazing to hear! I always find it hard to get my kids to eat veggies. Will definitely try this!
Borscht? Isn’t that just beet soup? Not sure how the kids would like it. But kudos to you!
This borscht is amazing! So hearty and full of flavor. Definitely a new favorite for me!
Yummy! I added potatoes and it turned out great! 😋
Potatoes? Really? That’s not traditional at all! Borscht is all about beets! 😅
Wth is borscht anyway? Looks like soup made from dirt. No thanks.
Amazing borscht! The flavors are just perfect. Will make again!
Too sour for my taste. Maybe less vinegar next time?
Why is there cabbage in this? Seems weird. Can I leave it out?
This is a totally different way to do borscht than I’m used to, but I liked it!
This recipe seems weird to me. No meat? Isn’t real borscht supposed to have it?
Glad you tried it! Borscht can be so versatile. Did you add the sour cream?
I tried this recipe but it didn’t taste like the borscht my grandma made. Might be missing something?
Simple and easy to make. Perfect for a cold day! It’s healthy too, which I like.
Can you use chicken broth instead of vegetable? Asking for a friend lol.
This is a great cold weather soup! Made it twice in a week! 😍
Like wat even is ‘borscht’? Never heard of it until now, but my friend say it is good. I’ll try this out.
Never made borscht before, but this was realy easy! I might add more vinegar next time.
Isn’t beetroot for salads? Not soup! Just no.
Yuck. Just didn’t taste good to me. I don’t get the hype 🙅♀️.
Why are you adding so much broth? It’s soup, not a swamp! Just saying…
So easy to make! My whole family loved it. 💖
Borscht soup isn’t supposed to have cabbage. This is wrong! Total fail. 1 star.
Actually, many borscht recipes include cabbage! It’s a traditional ingredient in some variations. Don’t be so harsh!
Borscht is Ukrainian, not Russian! Just sayin’.
Absolutely! Borscht is a staple in Ukrainian cuisine and often associated with their culture. It’s important to recognize that context!
I don’t know about all that. Borscht is just beet soup to me, who really cares where it comes from? Just tastes good!
This looks delicious!!! Can’t wait to try it. 😋
Just okay. It needed some meat or bacon for flavor. Ya know?
This borscht recipe is just perfect! I love the sour cream on top; it makes it so creamy. 🥰
This borscht recipe is fantastic! Tastes just like my grandma used to make. 🌟
Borscht? Never heard of it! Is it like beet soup or something? 🤔 Sounds weird!
I’m glad you enjoyed it! Borscht has such a rich flavor, and it’s awesome that it reminds you of your grandma. 🥰
I love beets, but the sour cream made it too creamy. Would skip that next time.
Borscht? Isn’t that from Russia? I dunno man, not for me. I like chicken soup.
My grandma made borscht from scratch. This one is quick and nice, but nothing beats her recipe! I’d give it a 4 for ease though.
I was skeptical about beets in soup, but this recipe was surprisingly tasty! The vinegar gave it a nice kick.
I dunno, it feels a bit off. Maybe too much beetroot? 🤷♂️
I made it without the garlic by accident. Still tasted good!
I tried it but found it too sour. Maybe too much vinegar? Not my fav.
I think the vinegar is definitely a tricky ingredient. Some people love it sour, but I can see how it might not be for everyone. Maybe try less next time?
Why do people even like this? It tastes weird to me. Can’t handle the beets!
This was so good! I added some extra garlic because I love that flavor. Will make again!
Extra garlic? Really? Not sure if that would work. Seems like it might be too much.
I’m glad you enjoyed it! Garlic really does add a nice kick. I may try that next time too.
Really good! I’ve never cooked with beets before, but I think I did alright. Tasted great! 🌈
I don’t get why people love beetroot so much. This soup was too earthy for my taste.
Yum! I feel like a pro chef making this. Thank you for the recipe!
This was really good! But why do you need vinegar? What’s that for?
The vinegar helps balance the sweetness of the beets. It adds a nice acidity to the soup! 😊
Borscht is overrated, it’s just beet juice… #NotImpressed
Sample of soup turned brown and was thick. Did I do it wrong?
Good recipe! I added some potatoes ’cause I like em. Kinda turned out good!
Potatoes in borscht? That’s interesting! I’ve never tried that. But if it turned out good for you, that’s what matters!
Seems too complicated for me. I just like simple soups. 🙁
