Instructions
Heat olive oil in a large pot over medium heat.
Add the diced onion and minced garlic, sauté until the onion is translucent.
Stir in the grated beetroot and shredded cabbage, cook for about 5 minutes.
Add vegetable broth and vinegar to the pot, bring to a boil.
Reduce heat to low, cover, and let the soup simmer for about 30 minutes.
Season with salt and pepper to taste.
Serve hot with a dollop of sour cream, if desired.
