Ingredients
  

  • 2 cups beetroot peeled and grated
  • 1 cup cabbage shredded
  • 1 cup vegetable broth low sodium
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar red wine or apple cider
  • to taste salt
  • to taste pepper black
  • to taste sour cream for serving, optional

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic, sauté until the onion is translucent.
  • Stir in the grated beetroot and shredded cabbage, cook for about 5 minutes.
  • Add vegetable broth and vinegar to the pot, bring to a boil.
  • Reduce heat to low, cover, and let the soup simmer for about 30 minutes.
  • Season with salt and pepper to taste.
  • Serve hot with a dollop of sour cream, if desired.
