Ingredients
- 1 cup wild rice rinsed
- 2 tablespoons olive oil
- 1 medium onion chopped
- 3 cloves garlic minced
- 12 ounces mushrooms sliced
- 4 cups vegetable broth or chicken broth
- 1 cup heavy cream
- to taste salt and pepper
- 1 tablespoon fresh thyme chopped
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until they are translucent.
- Add the sliced mushrooms and cook until they are tender and have released their moisture.
- Stir in the wild rice, ensuring it is well coated with the oil and mushroom mixture.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer, covered, for about 50 minutes, or until the rice is tender.

Really good if u like mushrooms. Not sure if everyone will like it tho, kinda heavy with the cream. My husband said no way.

This soup is AMAZING! Perfect for fall. The flavors are just perfect together. I used chicken broth instead of vegetable. Yum!
I don’t know about using chicken broth. Isn’t it supposed to be a vegetarian recipe? Seems kinda weird.
